I got a private truffle cooking class by a true Italian chef and the food was soooo good! Never had that much truffle in a single sitting before.

When you’re in Tuscany make sure to give Alessandro and his team a visit, try his amazing wines, olive oil, or book a cooking class yourself @orto_santulivieri

Burnt stuffed red pepper with North African inspired filling, whipped ricotta and Italian chili crisp. Sooo tasty! ❤️‍🔥

Been thinking about starting a substack with step by step recipes, is that something anyone would be interested in?

CACIO E PEPE

I was underestimating this dish before coming to Italy.
Although it’s a classic there’s too many bland versions out there. When trying it at @faripastaecucina in Siracusa it completely blew me away. Crazy how much flavor can come out of only three good quality ingredients.

This version here definitely came close 😮‍💨😮‍💨

ZUCCHINI (LEAF) ORECCHIETTE

I love experimenting with new exciting ways to utilize the whole plant and cook as low waste as possible.

Finding zucchini leaves (tenerumi) on Sicilian markets really surprised me. Since then I couldn’t stop using them. Put them in pasta, stews, sauces the same way you’d use spinach, it just adds this even more intense earthy zucchini taste.

Hands down the best dish I made all summer.
