Encrote -Semi final signature bake

I'm am proud to say that my last signature bake on @bakeoffau brought me much joy.
The task was to present an Encrote for judging. My answer was to create a hot water crust pastry (made from lard) with layers of chicken and pistachio, apricots, and chorizo .
It earned me a fist pump from the baking king @darrenpurchese, which was a highlight of my baking journey . Thankyou Darren you are inspirational.
This is where my journey ended with no regrets.
Congratulations to the finalists, @ohbhoyfood ,@isitworththespace, and @jess.bakes.pastries whom I have learnt so much from and love dearly x
They are my baking daughters, and I will forever be their Mumma T
Stay tuned on @foxtel or @binge this Tuesday at 7.30 pm. to see which baker wins the grand title of Australia's best amateur baker for 2025.
Thank you all for following my journey. I plan to keep on baking, so keep following to see what I get up to

What a fun week 6 @bakeoffau. We created a biscuit city that came together brilliantly.
Congratulations to Beth @ohbhoyfood for getting Star Baker (I need that brookie recipe )
and we saw the talented Brian @evaspatisserie leave the shed. He is an all-around great baker and a tremendous Dad to his beloved Eva. I am truly grateful to have met him and to have bake alongside him in the shed.
Now stay tuned tonight 7.30pm for Japanese week on @foxtel or @binge to see what we get up to !

Tropical week was hot . Literally, the shed was heating up. We saw Jess crowned star Baker 🌟 and we bid a sad farewell to the super talented vegan baker Jai.
Now be sure to watch me in the shed @bakeoffau Tuesday night 7.30pm on @foxtel or @binge to see how I fair on little and big week (yes, it's going to be entertaining 😀)
Lots of love and my sincere thanks for all my followers ,messages, and likes ❤️ by @tatiana.creates

$Bread week @bakeoffau was a winner for me. I created a fractured arm in a plaster cast as my reveal bread. I used beetroot and walnut infused bread dough to create the muscle structure and Gorgonzola bread dough to create the bone structure. I just love the combo af beetroot, walnut, and Gorgonzola cheese, and the judges also agreed it was a winner. Now watch on Tuesday night at 7.30 pm on #foxtel or #binge to see how I go in the bakeoff shed for week 5 . Wish me luck ! #foxtel #binge #GABO #breadmaking #breadweek #shellharbourbaker by @tatiana.creates$

Tatiana is da best. See her incredible showing in bread week this week! She made something truly incredible and you can catch up on binge and Foxtel. I am completely mortified at how I had my mic positioned here I am cringing looking at it pointing 90 degrees away from where it should be. Humiliating. #gabo #bakeoff #bakeoffau @tatiana.creates by @tatiana.creates

Lemon,Yuzu, and Poppyseed Loaf
This little unpretentious loaf cake packs a punch. It is full of tang and texture. The icing of crystal sugar dampened with fresh lemon juice is not only a simple addition, It serves to add a sharp tang followed by a sweet crunch. Candied yuzu peel and lemon thyme leaves scatter on top harmonious make this cake sing.
Sometimes, simplicity is best

Monte Carlo Biscuits
With all this wet and cold weather, I found myself in the warmth of my kitchen making these iconic Aussie biscuits. For my non Aussie friends, this morsel is a coconut and brown sugar crumbly biscuit sandwiched together with raspberry jam and vanilla buttercream.
I'm off to make a cuppa purely for dunking these gems into. Yes, it's a thing...don't judge x
