For the past three months I’ve been feeling uncharacteristically unlike me and I would like to thank @mollycodyre not just for interviewing me, but also for archiving who the fuck I am when I’m in a good headspace. I’m not passive. I stand up for myself and my beliefs and I don’t let anyone, from HeadChef to KP, walk all over me.But for three months, for the sake of being seen as compliant, and easygoing and manageable, I wasn’t any of this and it made me feel so unbelievably trash and hopeless and tearful and just generally shite (hence the easily avoidable depressive episode I’m going through now). It’s so important to stay true to who you are. To recognise your strengths and embrace your nature and personality even if the people around you don’t see it or appreciate it. I didn’t do this and it ate me up inside and I will NEVER EVER break myself down to be palatable for anybody aside from myself again.Lesson learnt: Not everyday peace. #Mastic Tart, #Pistachio, Fennel Seed #IceCream, @louiskorovilas Family Greek Olive Oil.It isn’t often that you come across an ingredient that you completely haven’t heard of before or know absolutely nothing about. Mastic is the dried sap of a tree that grows in Chios. It’s bitter but sweet. Woody but floral. Smells like incense and peppermint but tastes like pine and liquorice. It’s quite an odd flavour but I added some vanilla so it doesn’t feel too foreign to the taste buds. Will tweak the pistachio sweet paste over the next few days then hopefully will be menu bound!#Dessert by @taylor.mayed
