115 g unsalted butter
1 tbsp white miso paste
100 g brown sugar
50 g sugar
1 egg
1 tsp Taylor & Colledge Vanilla Extract

A good cucumber salad really hits the spot, right? 🙌 We love this one because it ticks all the boxes: it’s got crunch, a pretty delicious dressing and it’s perfect for meal prep. What’s your favourite cucumber salad?

📝 Ingredients
For the cucumber salad:
10 small cucumbers
1 tbsp fine sea salt

For the dressing:
3 tbsp rice vinegar
2 tbsp fresh lime juice (about 1 lime)
2 tbsp light soy sauce (or tamari)
1 tbsp Taylor & Colledge Maple Syrup*
1 tsp fresh ginger, finely grated
1–2 tbsp toasted sesame oil
1 tsp Taylor & Colledge Vanilla Extract

For the toppings:
6 spring onions
1–2 tbsp sesame seeds
1–2 tsp crispy chilli oil (optional for serving)

Steps:
1. Wash the cucumbers. Place a cucumber between two chopsticks laid flat on the board, so the knife can’t cut all the way through. Make closer, slightly shallower, diagonal cuts along the length, then flip and repeat straight across the other side to create the accordion effect. Repeat with all the cucumbers.

2. Place the cut cucumbers in a bowl, sprinkle with the sea salt and gently massage it in. Leave to sit for 10–15 minutes. Rinse, then pat them dry with a clean tea towel.

3. Meanwhile, whisk together the rice vinegar, lime juice, soy sauce, maple syrup, grated ginger, sesame oil and Taylor & Colledge Vanilla Extract in a small bowl.

4. Cut the spring onions into fine rings.

5. Divide the spring onions between the jars. Then pack the accordion cucumbers upright into the jars and pour the dressing over them.

6. Scatter the sesame seeds over the top and seal the jars.

7. Shake gently once to distribute the dressing, then refrigerate. For meal prep, shake again the next morning before eating.

8. Just before eating, drizzle over the crispy chilli oil if using and give a final shake to bring everything together.

*Our organic Canadian maple syrup is currently available in Italy. Stay tuned for further markets. 😉

SWEETCORN VANILLA BLONDIES

AD I put sweetcorn in a blondie… and I’m very into it.
Sweet seasonal corn meets blackberry and vanilla in this layered bake, a vanilla rich corn blondie, blackberry jam and a sweetcorn infused ganache, finished with charred corn for a little extra pop of texture.

I’ve used @taylorandcolledge Organic & Fairtrade Vanilla Extract throughout the blondie and ganache. Just a few tsp gives a deep, full-bodied vanilla flavour and helps bring out the natural sweetness of the corn.

It’s Organic September, so it felt like the perfect time to celebrate organic ingredients and seasonal produce, while giving a savoury staple a seriously sweet AF makeover.

INGREDIANTS
2 corn cobs
500ml double cream
360g white chocolate
3 tsp @taylorandcolledge vanilla
1 tsp butter
Pinch of salt
2 eggs
150g unsalted butter, melted
100g granulated sugar
150g soft brown sugar
135g plain flour
150g cornmeal
¼ tsp bicarbonate of soda
Blackberry jam

METHOD
Strip the corn from the cobs, reserving ¼ of the kernels for topping.
Add the cobs, a handful of clean husks,  leaves and 1 tsp vanilla to the cream and steep for 1 hour.
Strain, reserving around 200ml infused cream for later.
Roughly blitz the remaining corn kernels.
Mix eggs, melted butter, 2 tsp vanilla, sugar, flour, cornmeal, bicarbonate and a pinch of salt together with the blitzed corn until just combined. Pour into a lined tin and bake at 180°C for 25–35 minutes. Cool completely.
Spread over a layer of blackberry jam and freeze for 20 minutes to set.
For the ganache, warm the infused cream and pour over the white chocolate. Add vanilla, butter and salt, once the chocolate has melted whisk until smooth. If it splits, add a splash of warm cream and blitz with a hand blender.
Cool slightly to room temperature. Pour over the blackberry layer and chill until set. Finish with charred corn kernels, slice and serve.

This iced latte tastes just like freshly baked banana bread, but served in a glass. 😍 Homemade banana bread syrup, espresso, milk and a dollop of vanilla cold foam. It’s sooo good!

📝 Ingredients
For the banana bread syrup:
3 large bananas, very ripe
100 g light brown sugar
150 ml water
1 cinnamon stick (or 0,5 tsp ground cinnamon)
1 pinch of fine sea salt
1 tsp Taylor & Colledge Vanilla Extract

For the iced latte:
2 double espresso shots, freshly brewed
300 ml semi-skimmed milk/plant milk of your choice (e.g. oat milk)
Ice cubes

For the vanilla cold foam:
100 ml whipping cream
½ tbsp icing sugar
1 tsp Taylor & Colledge Vanilla Extract

For the decoration:
1 biscuit or shortbread
A handful of banana chips

Steps:
1. Mash the bananas. Place the mashed bananas, brown sugar, water, cinnamon and salt in a small saucepan. Bring to a gentle simmer and cook for 10–12 minutes, stirring occasionally, until reduced and syrupy.

2. Remove from the heat, discard the cinnamon stick and blend the syrup. Strain it through a fine sieve for a smooth result, then stir in the Taylor & Colledge Vanilla Extract. Leave to cool completely before using.

3. Whip the cream and the icing sugar with an electric whisk until soft peaks form, then stir in the Taylor & Colledge Vanilla Extract. Set aside for now.

4. Fill two glasses with ice, then pour over the milk. Mix the espresso shots with 3–4 tbsp of the banana bread syrup each, then pour them on top of the milk.

5. Pipe or spoon the vanilla cold foam on top. Crumble the biscuit on top and finish with some banana chips.

6. Serve immediately with a straw.
