Indie June Ayers 🤍 7.3.25

A week ago today we welcomed our last and final blessing to complete our little family. And gosh we love her so much, including big brother! He’s her biggest fan 🫶🏼 The best surprise when Kaleb told me it was a girl. A moment I’ll never forget 😭

We finally made it home from the hospital yesterday afternoon after spending 5 days in the NICU and wow I am so thankful to be home with both of my babies. My heart is so full!

Thank you to everyone who has called and checked in on us, in the hospital we were focused on getting sister home and now that we’ve been home I’ve been soaking up every minute of being home with my babies so if you haven’t heard back from me that’s why! 🫶🏼🥰 taken in Farmington, Arkansas by @taylormayerss

BBQ PULLED PORK NACHOS 🤎🐷

The PERFECT easy dinner for feeding a crowd!! These BBQ pulled pork nachos are SO good, easy to throw together, and everyone can customize their plate however they like! 🤤

Ingredients:

For the pulled pork:

* 1 bone-in pork butt roast (I used 8.5 lbs)
* 2 tbsp olive oil
* 2 tsp salt
* 2 tsp black pepper
* 2 tbsp onion powder
* 2 tbsp minced garlic
* 3–4 tbsp Stubb’s Texas All-Purpose Rub
* ¼ cup Worcestershire sauce
* ½–1 cup Head Country Hickory Smoke BBQ Sauce (plus extra for serving)

For the nachos:

* 1 large bag tortilla chips (12–16 oz)
* 3–4 cups shredded cheese
* 1 cup sour cream (for topping)
* Extra BBQ sauce, if desired

Directions:

1. Place bone-in pork butt roast in the crockpot and drizzle with olive oil and Worcestershire sauce.
2. Season BOTH sides of the roast generously with salt, pepper, onion powder, minced garlic, and Stubb’s Texas All-Purpose Rub, making sure the seasonings are evenly distributed.
3. Cook on HIGH for approximately 6 hours for an 8–9 lb roast. For a smaller 4–6 lb roast, cook on HIGH for 4–6 hours, or until fork-tender.
4. Remove the bone, shred the pork, and mix in your BBQ sauce. I didn’t add a ton because I wanted everyone to have the option to add more to their own plates!
5. On a baking sheet, layer tortilla chips and then shredded cheese. Add the BBQ pulled pork on top.
6. Bake at 400°F for 10 minutes or until the cheese is melted.
7. Top with sour cream and an extra drizzle of BBQ sauce if you like, and ENJOY!! 🤌🏼

SO easy, SO good, and perfect for feeding a crowd or having leftovers!! SAVE this one for your next dinner night! 🤎#crockpotmeals #crockpot #easymeal #easyrecipe #pulledpork taken in Fayetteville, Arkansas by @taylormayerss

Crockpot Meatball Subs 🤍

An easy, delicious crockpot dinner the whole family will love! Homemade meatballs simmered in marinara sauce, topped with melted cheese on toasted sub rolls.

Ingredients:
• 1.5 Ibs lean ground beef
• 1 small yellow onion, diced
• 3-4 garlic cloves, minced
• ½ cup Italian breadcrumbs
• ½ cup freshly grated Parmesan cheese
• 1 egg (I used 1 tbsp of mayonnaise since I was out of eggs)
• Oregano, salt & pepper, to taste
• 2 (24 oz) jars marinara sauce
• Sub rolls
• Cheese slices for topping (provolone, mozzarella or Parmesan)

Directions:
1️⃣In a large bowl, combine the ground
beef, onion, garlic, breadcrumbs,Parmesan, egg and seasonings. Mix until everything is well combined.
2️⃣ Roll the mixture into 1-1½ inch meatballs.
3️⃣Pour one jar of marinara sauce into the bottom of your crockpot. Add the meatballs in a single layer if possible.
4️⃣Pour the second jar of marinara over the meatballs, making sure they’re covered.
5️⃣Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours, until the meatballs reach an internal temperature of 160°F.
6️⃣Assemble your subs by adding the meatballs and sauce to your rolls. Top with your cheese of choice! I used provolone.
7️⃣Place the subs in an oven-safe dish
and broil for a few minutes until the cheese is melted and the rolls are lightly toasted. Keep a close eye on them

Serve + enjoy!

1 cup orzo
½ cup coconut milk or heavy cream
1–2 handfuls spinach

Directions 👩🏼‍🍳
1️⃣Add everything to the crockpot except the spinach, orzo and cream. Cook on HIGH for 2 hours.
2️⃣Add the cream, orzo and spinach and cook for another 30 minutes, or until the orzo is fully cooked.
**If using coconut milk, you can add it at the beginning with everything else!
