📜 THE PEOPLE’s POTION

🧪 The antidote!! This is a simple serve with a bit of technique to elevate it.

🗣️ HOT - COLD - RUM - COFFEE

🇨🇺 Cuban coffee tends to be lower quality robusta due to it’s altitude and climate

🏝️ low altitude and hot climate doesn’t deliver fruity/floral coffee… usually

🥃 the influence of the rum barrel seems to deliver this fruity character with a bit brown sugar too

🥶 freeze distillation: when you freeze milk the fatty compounds will melt faster than the water so you can concentrate the richness of the milk by effectively removing the water. Think of a reduction in cooking but instead of water evaporating it is left frozen and discarded.

☯️ this drink is all about contrast, cold filter with hot foam, rich milk vs tea like filter
_______________________________

RECIPE:

Lavazza’s 1895 Ronero Filter spec

15g/250ml
80 degress C
Medium/coarse grind
50ml bloom - wait 30 seconds
Add 50ml increments and let the water drain fully

Freeze Distilled Milk

Freeze whole milk
Remove lid and place upside down in a jug in the fridge
Wait to thaw
The longer you leave it the less rich it will be as more water melts in it

3️⃣ RECIPE CHANGES 🔁

⬆️ in these examples the changes lead to a better recipe

🇮🇹 Italy also dealt with restrictions in coffee supply but roundly rejected chicory

☕️ One of Lavazza’s house blends is called Super Crema - Piedmont seems to love “super creamy” products
