Breakfast Tacos 🌮

It's been a while since I last posted—I've had a lot going on lately.

This time I went with some spicy breakfast tacos. There's just something about fresh corn tortillas that makes tacos taste so much better.

I cooked the tortillas first and let them cool slightly before spreading on the sausage meat. Then I cooked mushrooms, crispy bacon, black and white pudding, and fried eggs.

I chopped up the bacon and pudding, added them to the tacos along with the mushrooms, then topped each one with a fried egg. To finish, I drizzled over some habanero salsa and topped them with crispy onions and fresh chives.

Simple, packed with flavour, and the perfect breakfast. 🌮🔥

New bbq 🍖

Unboxing the new @blackstoneproducts_uk and it was pretty easy to assemble.

Seasoning the Barbecue is a must do to make it none stick, started off with washing the bbq with warm soapy water and then i dried it off with kitchen paper. Then I coated it in Avocado oil and let it burn off until it stopped smoking. I coated it in oil four times and done the job.

Had to do a small cook aswell which was a Crossisnt with bacon, eggs, jalapeño relish and finished with chives.

My neighbours cat was checking how i was getting on building the the Blackstone too 🐈

Dishroom🌶

My first vist to @dishoom and loved it so much.
I have the Dishroom book the last few years and have cooked some amazing food from.

First up we had the bun maska chai,
The Irani café classic. Soft bun with butter inside, to be dipped into the hot chai which was delicious, bread was soft & hot chai went so well together.

Second dish was the famous nan rolls,
We all had the double bacon & eggs nan which
had a little cream cheese, tomato-chilli jam and fresh coriander leaves in a freshly baked nan.

Extra sides: Griddle mushrooms, two portions of tasty pork sausages & the masla beans which were so good.

Brewery Trip 🍺

Flew over from Ireland 🇮🇪 to Stratford-upon-Avon where my cousin and his fiancé put us up and gave us the 5 star treatment.

Hit the cousins local @yabardcraftbeer on the Sunday we're they had a bus organised for us to hit up two brewerys.

Up first was @boatlanebrewery which was small but a cool brewery, what a lovely spot and found it hard to leave when we had fantastic beers and a lovely fire beside us.

Second brewery was @deyabrewery which was were i got to try Dipas & Tipas which is double and triple ipas. All were fantastic and was surprised how much i loved them.

Now for the amazing food which was @smiths_of_bourton which we had the MR.P Burger, Limp Brisket Burger, corn ribs with pecorino & cajun fries.

I also hit up @macstdiner which done amazing mac & cheese

I had Buff Down Tatiana which had,
mac topped with pulled buffalo chicken, Stiton cumble and chives.

We finished off with Affogatos and my dad loved them as you can see at the end of the video 🤣🤣🤣🤣

Basque cheesecake 🔪

Basque cheesecake, its caramelized top gently meeting the cream beneath. Served with seasonal berries and a delicate raspberry coulis

It was my Second attempt at basque cheesecake and it turned out really good apart from setting the parchment paper on fire at the end 🤣

My First time making basque cheesecake i burnt underneath it on the Barbecue and have learned from that mistake and we all have failures along the way.

Will definitely do this again and definitely a recipe to follow.

F1 Brazil 🇧🇷

21 st race of the season.

Had to go with picanha, which is definitely a favourite of mine to cooked, which i cooked to medium/medium rare.
Made up a chimichurri to complement the rich beef.

Done some Pao de Queiic (Cheese Bread) this was shop bought but very tasty and i topped it with parmesan & chives.
Then the lady in the Brazil shop recommended
guarana which is mineral that taste abit like ginger ale and it might be even nicer then it.

Meat was cooked over restaurant grade charcoal from @goodwood_fuel

Ireland 🇮🇪 vs Australia 🇦🇺

Attended the rugby match at the @avivastadium with the father and had such a good day. Ireland won 46-19

Went to @chimacdublin for pre match food and it didn't disappoint. Got the spicy Korean wings, Korean chicken burger and the best poutine I've ever had which it was amazing.

Went to @the_waterloo_house and finally got to meet @twisted_ribs who was an absolute gent and had a few pints.

Next day the father and I went too @two_pups_coffee for the best shakshuka and they give you a lovely portion of sour dough to go with it.

All in all a fantastic Day and night.

F1 Texas 🇺🇸

19th race of the season.

Had to make a bbq platter which was the best and toughest cook I've ever done.

Meats:

● Brisket
● Pulled pork
● Turkey
● Iberico ribs
● Korean chicken wings
● Jalapeños & cheese sausages

Sides:

● Street corn (esquites)
● Coleslaw
● Potatoe salad
● Corn bread
● Pickled onions
● Fresh chillis (pickled after this cook)

The street corn (esquites) was my favourite thing on the platter, I used @wilsons.bbq recipe.

Corn bread was also my first time trying and making it and I loved it so much, reminded me a mixture between bread & cake.

I thought I was going to get the perfect juicy snap on the sausage but it was a failure as you can see in the video 🤣🤣🤣

F1 singapore 🇸🇬

18th race of the season.

Had to go with singapore noodles, this was a very tasty dish.

Singapore noodles is a dish of stir-fried cooked rice vermicelli, curry powder, vegetables, scrambled eggs and meat – most commonly char siu pork, prawns.
I went with prawns and had left over bbq pork but will definitely make char siu next time.
