This is my mid-century inspired bartop exhibiting it's sexy curves. I really truly miss being a part of a neighborhood space where we can all gather and improve upon each other's day. From our new Rooftop Sessions series. @sean_in_the_barrel and I came up with a fun twist on the Bamboo cocktail. A delicate and refined classic that is seeing a resurgence, and we can definitely see why. We found that the dry Fino Sherry, made from the Palomino grape, has really similar qualities with raspberries. So we married the two over a warm water bath at 125° F for 35 minutes. Which gave the raspberries a stewed jammy profile. We then took some local tangerines, and made a sugar oil from the peels. Taking the peels and macerating them over granulated sugar coaxes the oil out of the peels and eventually turns the mixture in to a liquid state. Yum! Raspberry Bamboo 1.5 Dolin Dry Vermouth 1.5 Raspberry Fino Sherry .125 Tangerine oleo syrup 2 dashes burnt lemon bitters 2 dashes Angostura bitters Express oil of lemon peel and discard With a lower proof on this bad boy, it has become a mainstay for us on these warm spring days.
