You can make some of the yummiest EASY chicken ever with just 6 simple ingredients you probably already have in your cupboard!🙌🏼 “Tuesday Chicken” is a family favorite. Wouldn’t have it any other way!🙌🏼❤️ Our kids are playing “Cajun Fiddling on the Bayou.” They played this in their Suzuki group concert this weekend and they’ve been jamming to it ever since lol… The younger kids were there as the clapping dancing audience. What we eat in a week as a family of 10! (Monday Edition) Recipe below!⬇️ Tonight we are eating A dupe of Panera Bread”s Broccoli Cheddar soup. (From Food Network). Comfort food in a bowl! And much more budget friendly if you make it yourself! We pair it some oven warmed baguettes from Trader Joe’s. (They only cost $1.99!) Enoch is a sweetheart to help me in the kitchen. Cooking is one of his favorite pastimes. (And I’m super grateful for the help!) I hope to post more of this week’s meals coming up!❤️ Here's therecipe: (we double it)6 tablespoons unsalted butter1 small onion1/4 cup all purpose flour2 cups half and half3 cups low-sodium chicken broth2 bay leaves1/4 teaspoon freshly ground nutmegKosher salt and freshly ground pepper47 - inch sourdough bread boules (round loaves) (or baguettes if you don't want to serve in a bread bowl)4 cups broccoli florets (about 1 head)1 large carrot, diced21/2 cups grated sharp cheddar cheese, plus more for garnish1. Melt butter in a large Dutch oven, add the onion and cook until tender, whisk in the flour and cook until golden, then gradually whiskin SO the half and half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium low and cook until thickened about 20 minutes.2. Add broccoli and carrot to the broth mixture and simmer until tender, 20 minutes. Discard the bay leaves. Purée the soup in batches in a blender until smooth or use an immersion blender.3. Family of 10 living in San Diego, CA trying to pay off $37k in credit card debt! (But still have fun along the way!)It always feels like 2 steps forward and 1 step back when it comes to paying off credit card debt! We were making a lot of progress and then Marc lost his job and while we are still paying some off, our pace has slowed quite a bit.Before this we were living in NYC so our school age kids could attend the Juilliard pre college program, but to keep all the bills paid in that exnensive citv with a big familv we took on more and more debt. Our NYC landlord gave us a notice to vacate and we felt that all the debt and expenses of NYC were just too overwhelming so we decided to come back to San Diego because my parents are here and we would be able to move into a house that my grandpa built that my dad was overseeing. The house has fallen into disrepair so my dad and our family are fixing up the place.Marc has been applying for many jobs and we thought he found the perfect one! But it didn’t work out unfortunately. So he’s started his own business as a handyman in San Diego to help ends meet while he is applying for other jobs. We actually had enough lentils for 2 meals with this recipe! So according to girl math I’m going to say we succeeded.😅 (For the second time we ate this we did need to make more rice, eggs and cucumber salad but these lentils are filling and go the distance. If you are single you could probably get 14-20 meals from this so it’s definitely budget friendly. (Recipe below) We started out with $37k in credit card debt when we moved and now we have $25k in debt so even though we aren’t credit card debt free we are heading in that direction. Adding beans to any meal as a protein source helps keep the costs lower. You can also use beef or turkey bacon. Beef is usually more expensive than pork but is still a good option.Recipes:Mauritian Lentils & Rice(This is a double recipe so feel free to half it)3 cups lentils 2 15 ounce cans tomato sauce 2 15 ounce cans diced tomatoes 2 onions1-2 inches of ginger root Dried thyme Salt & pepper 12 ounces of baconHoneyCook lentils according to package directions, in a separate pot fry bacon, add chopped onions and chopped ginger. Add in diced tomatoes & tomato sauce, simmer. Add in cooked lentils, 1-2 teaspoons of salt (according to taste) and pepper. Add in dried thyme and honey according to taste.
