Sweetcorn Ramen with a Cashew-Miso Broth, Jammy Egg & Pickled Red OnionsSweetcorn season!! 🌽 Corn on the cob with lashings of butter is hard to beat, but this ramen is a strong contender. The cashews are blitzed with miso, sweetcorn and stock, giving the broth a velvety, rich texture. The cashews are a good source of plant protein too 🌱✨ Top tip for these noodles: don’t skip the chilli oil or the pickled onions — they cut through the creamy sweetness perfectly. @laoganmausa Crispy Chilli Oil is my fave (the one with all the crunchy peanuts). Ingredients (serves 2-3)200g sweetcorn + extra for garnish (fresh or tinned) 75g cashews (soaked for a minimum of 4 hours)600ml veg stock2 tbsp white miso paste180g egg noodlesEggs2 spring onions, slicedPickled red onionChilli oil10g fresh corianderSesame seedsLime wedgesMethod1. Blend the soaked cashews, 200g sweetcorn, miso & stock until smooth. Transfer to a pan and simmer for 10 minutes on a low heat, whisking often as it thickens. You can add more or less water depending on the consistency you like. 2. For jammy eggs, boil for 6½–7 minutes, cool in iced water, peel and halve.3. Cook the noodles according to the packet.4. Smacked cucumber salad !! 🥒One of my all-time favourites. Crunchy, spicy and refreshing. It pairs perfectly with anything sweet and spicy, but it’s just as good eaten straight from the bowl.So much flavour for so little effort.Ingredients (serves 4)• 2 cucumbers• 3 tsp salt• 3–4 garlic cloves, finely grated or crushed• 1 tsp sugar• 4 tsp sesame oil• 2 tbsp soy sauce• 2 tsp rice vinegar• 3–4 tsp chilli oil (or to taste)• White sesame seedsMethod1. Smash the cucumbers until they split, then roughly chop into pieces.2. Toss with the salt and leave for 10 minutes to draw out the excess moisture. Drain off any liquid.3. Add the garlic, sugar, sesame oil, soy sauce and rice vinegar, then toss everything together until well coated.4. Some tasty things from the past week!! Dinner outside in the sunshine every day: pure joy - Miso beans, Welsh dragon sausages from @runctonfarmshop (the best ever) & pickled onions - Preserved lemon roast chicken - My first focaccia!!!! & the most delicious burrata, pesto chicken sandwich. Very happy with my first foray into homemade bread. I fear I may now be obsessed - A big raid-the-fridge leftovers salad with an herby anchovy salsa- A simple tomato & red onion salad, roasted squash & tahini & pickled cabbage Ohhhh it’s so good to be back in a working kitchen and to get my hands on so much delicious summer produce. Sesame-crusted trout with jasmine rice, greens & a lime-miso sauce. A quick, nourishing meal that is ready in under 30 mins.Perfect for busy summer weeknights when you want something healthy and delicious without spending too much time in the kitchen ☀️ hellllooo heatwave I’m a huge trout fan and much prefer it to salmon, but this recipe is versatile and would work well with either fish.Ingredients (serves 2)2 trout fillets, skin on2 tbsp black sesame seeds2 tbsp white sesame seeds1 tbsp rapeseed oilSalt150g jasmine rice2 spring onions, thinly slicedA small bunch purple sprouting broccoli, trimmed 1 tbsp rapeseed oil1/2 cucumber, thinly sliced1 tsp rice vinegarFor the sauce:1 tsp miso paste2 tbsp soy sauce1 tsp maple syrupJuice of 1/2 limeMethod:1. Preheat your oven to 180°C.2. Rinse the jasmine rice until the water runs clear. Cook according to package instructions.3. Make the Sauce: in a small bowl, whisk together the miso paste, soy sauce, maple syrup and lime juice until smooth. Taste and adjust as needed. Set aside.4. Toss the cucumber slices with rice vinegar and set aside to lightly pickle.5. Coat the trout fillets in the sesame seeds and place on a parchment-lined baking tray. Drizzle with rapeseed oil and season with salt. Roast in the oven for 7 minutes. Add the broccoli to the tray, drizzle with a little more oil, and continue roasting for another 5-8 minutes, or until the trout is just cooked through and the broccoli is charred and tender.6. Spoon the rice into bowls or on plates, add the roasted trout, broccoli, pickled cucumber and spring onions. OAXACA ROAD TRIP 🇲🇽🌮🚗How to spend a weekend exploring mezcal countryThe region of Oaxaca has so much to offer! If you’re visiting Oaxaca City, I highly recommend renting a car for the weekend and exploring nearby areas. You’ll have the chance to sample some incredible mezcal, eat delicious street food & traditional Oaxacan cuisine; as well as visit some beautiful natural sights and ancient ruins.Day 1📍Hierve el Agua📍Mezcal tasting📍Early dinner at Mo KalliDay 2📍Tlacolula Sunday Market: street food breakfast📍Yagul 📍Late lunch at Almú TilcajeteDay 1 (Saturday)🔸Hierve el Agua: a natural reserve with beautiful mineral pools and unique petrified rock formations. Spend a few hours swimming, doing a short hike and enjoying the sunshine and views. If you take the non-toll route, be prepared for some dirt roads!🔸Mezcal tours & tasting: there are so many options for mezcal tasting in this area. This region sits right in the heart of Oaxaca’s mezcal production, so you’ll pass multiple palenques (traditional distilleries) along the way. You can stop at a local spot near Hierve el Agua or head towards Santiago Matatlán on the drive back — often referred to as the world capital of mezcal. You can either book a full tour or just stop in for a tasting.🔸Early dinner at Mo Kalli, Tlacolula: this was our best meal in our month-long stay in Mexico — don’t miss out!! Day 2 (Sunday)🔸Start your morning at the Tlacolula Sunday market for a street food breakfast and a wander — it’s one of the largest and most famous markets in the region, known for its incredible local food and atmosphere.🔸Yagul: a Zapotec archaeological site with an ancient fortress. Spend an hour or so exploring with panoramic views over the Tlacolula Valley. It’s easily accessible from the main road en route back to Tlacolula or Oaxaca City from Hierve el Agua.🔸Lunch at Almú Tilcajete: this is a slight detour on the way back to Oaxaca City but so worth it.
