I said there would be more significant numbers coming…

Fifteen. Numbers go up. Numbers go down. I’m learning not to confuse either with winning or losing. Especially this year.

But this little restaurant. This stubborn, hungry, demanding thing that Pallavi and I built has developed a mind of its own. It has its own pulse. Its own people. Its own place in the world.

And somewhere amidst all the madness of this past year, I get to look at NĀVU and realise that we’ve made something that has become so much bigger than us.

Fifteen. And I’m proud of her.

And what a bloody good night! Old friends, new faces, and the rare pleasure of seeing so many people from this wonderfully mad industry in one room. A huge thank you to Divia Thani, Salil Deshpande and the entire Condé Nast Traveller team for one hell of an evening. And for giving all of us who spend our lives feeding people a fantastic excuse to get dressed up and party!

I haven’t posted here in a year.

Maybe because the last twelve months have been difficult to reduce to photographs. Maybe I don’t have the words.

It’s been a year of numbers. Nine, especially.

There have been other numbers. Revenue. Debt. Targets. Seats. Salaries. Numbers measuring success. Numbers measuring survival.

And then the things that refuse to be measured.

Grief. Love. The people I want more time with. The ones I would give anything for one more conversation with. The extraordinary woman standing beside me while we build this thing. The ones I love deeply, even when I can’t keep them close.

And NĀVU.

Somewhere along the way, NĀVU became another living thing at the table. Temperamental, hungry, expensive, magnificent.

The universe, if it’s trying to teach me something, has not been subtle. It’s kicked the shit out of me, handed me something I’ve been waiting for my whole life, then kicked the shit out of me again. Sometimes at exactly the same time.

And somehow, here I am. Battered. Terribly bruised. But still standing. Still building. Still stupid enough to believe in things like love and loyalty.

Soon, more significant numbers.

I don’t need this year tied up neatly with another lesson. I know what survived it.

Tonight, we cook our last service at Domlur.

The small space everyone thought would swallow us whole — too small, too basic, too tucked away to matter.
But we proved that location means nothing when the soul is loud. We took this blank, bare-bones space and filled it with warmth, chaos, intimacy, and the kind of energy you can’t fake. We bled here, fought here, laughed like idiots here. We served food that carried our fingerprints, our late nights, our stubborn belief that NĀVU could live anywhere — as long as we showed up with heart.

Tomorrow the lights dim for a few weeks. Not an ending but a transformation., the only kind of evolution we know.
We move into a new space with a new menu we’ve been aching to unleash… but the same grit, the same blood and sweat DNA that got us this far.

If you’ve eaten with us in Domlur, you’ve felt this place. And if you’re waiting for what’s next — we’re building it with the same reckless love that makes us who we are.

See you soon.

An appetiser of fresh asparagus, gently peeled, quickly cooked, served with a fresh zing of lemon, the brininess of capers and richness of demi sel butter. A dish that can exist only for a brief period, when the asparagus is at its most tender.

Where? Down the street from Ranka Heights, not as far as the Army gate, up a flight of yellow stairs, in the arrondisement of Domlur… is an unexpected place. A salon, a dining room, a restaurant. A little space we call NĀVU.

Although I can party like an absolute rockstar, it would appear that I cannot recover like one. It’s taken me a week to get to writing this!

Putting together endless menus, cooking and tasting and arriving at what we think is the right balance of the poignant, the profound and hopefully, the humorous. Remembering when it was just us. Dreaming of new and yet undiscovered worlds. Drinking endless cups of coffee. Pouring celebratory cocktails as often as we can because even the small things need to be celebrated. Knowing that together we want to cook food that we want to eat, an extension of us. @_disturbingthepeas,spitters are quitters. You know what I mean. No one else I’d rather have by my side, chipping away at the mountain.

NĀVU, with you I’ve learned that new and better emotions exist. That the week has more than seven days. That there are new worlds, involving bigger teams to do our bidding. That, like Tennyson said, all experience is an arch whose margin fades forever and forever when I move. Keep it simple and delicious! @navuproject

Only pride for the hardworking team we have. It’s not just us anymore. Thank you!

Vanilla, the adjective. Meaning ordinary, conventional, boring. The opposite of hot and heavy.

So, on a scale of vanilla to fifty shades, how do I rate our staff lunch du jour? Somewhere high up, between Jude Law in The Talented Mr. Ripley and Christian Bale in American Psycho.

As always, @_disturbingthepeas on the other side of the table, making’ lunch look positively voluptuous.

The anniversary of choice is upon us. It’s a moment to celebrate our advances, to recommit ourselves to defending freedom, to remember what it means not to have the right to choose. Like the freedom to go to a restaurant is about liberty and choices. Should we go to NĀVU? Should we eat the fresh asparagus? Or should we try the mushroom parfait? Produce so rare that we only receive it in small batches or an unusual take on a pâtè? Classic or avant garde?
This is every day luxury. A casual Thursday night dinner or Saturday date night. A privilege… this freedom of choice.
And yet, at the midnight hour, like a fairy tale, liberty turned into a pumpkin. As liberals, as individuals, we’ve lost. It’s hard to get past the inevitability, the exhaustion of the daily fight.
But you know what?
What bugs them is that we keep showing up, we keep going.
So here’s to showing up. Tomorrow. And the day after. And the day after that. Past the exhaustion, the hardships, the struggles.
To showing up.

NĀVU is 3.
People will tell you that anyone who works as relentlessly as we do, in an unforgiving business, is insane. But isn’t the very definition of insanity here just another word for focus? Or single-mindedness? Where would the world be without us crazies?

So what do I tell NĀVU on her third birthday?
Hard work and results often correlate but success is largely out of our control. Our focus (and insanity) remains on the work.
And the age old certainty that the reward for hard work is more hard work. Stay true to yourself. Express your radical passions and beautiful obsessions. Create good, flavourful food and that stays on in people’s minds long after it’s gone. Be the most expansive version of yourself. The rest is up to the stars aligning and Mercury going retrograde. Pallavi and I are right there with you, crazies that we are.

For the last while, I’ve focused intensely on the day to day, the next step and only the next step. It’s a rare and gratifying moment for me, to look back and see how many lives have been lived, how much ground covered. Even rarer to see how much is glimmering on the horizon still.

I’m taking a moment to raise a glass to all of you who are part of the adventure that is my life. Whether you’ve been there all along or just tapping in… thank you, thank you, thank you.
