Soft, melt-in-mouth Gujarati khandvi made at home with simple ingredients 🤌🏻✨ Such a delicious evening snack, tea-time snack or starter for guests!

**Recipe 👇🏻**

🌼 First, prepare the tadka: heat a little oil, add mustard seeds, sesame seeds and curry leaves. Add grated coconut and sauté lightly. Keep aside.

🌼 In a bowl, take **1 part besan + 1 part curd + 2 parts water**. Add haldi, salt, red chilli powder and ginger-green chilli paste. Mix really well until smooth.

🌼 Transfer the mixture to a pan and keep stirring continuously on medium-low heat for around **10 minutes**, until it becomes thick.

🌼 To check if it’s ready, spread a little mixture on a plate and try rolling it. If it rolls easily, it’s done!

🌼 Immediately spread the mixture into a **thin layer** on a flat surface. Let it cool slightly and cut into thin strips.

🌼 Spread the sautéed coconut generously over the strips and roll each one.

🌼 Top with the remaining tadka, coconut and fresh coriander.

And that’s it! 💛 Homemade Gujarati khandvi that’s soft, delicious and perfect for a snack or when guests are coming over.

**Save this recipe to try at home!** 🫶🏻
