Save for your next weekend brunch recipe!! 🍳🫘

1 onion 🧅 (chopped thin slices)
1 red pepper (chopped thin slices)
3 garlic cloves 🧄
1-2 chillies 🌶️
1 tbsp paprika
1 tbsp cumin
1 tbsp ground coriander
430g butter beans (I use M&S - 55p!!)
1 can chopped tomatoes
4 eggs
200ml water / butter bean juice
Parsley

Method:
- Fry onions in olive oil for around 5-6 mins until beginning to caramelise, add sliced peppers and cook for another 5 mins before adding garlic and chilli
- Add spices, drained butter beans (keep the juice to add instead of water if you prefer!), then add tinned tomatoes, a pinch of salt and water / butter bean juice
- Leave sauce to simmer for 10-15 mis until sauce is thick
- Use wooden spoon to make small wells in sauce and crack eggs in, cover with lid and cook for 6-7 mins until egg whites cooked and yolk still runny
- Serve on bread with parsley!🌿 by @the_culinary_cloud_
