I don’t know if this is going to work.

But I’m going to find out.

I’m 35 years old, a father of 4, and I’m working a job I don’t want to do forever.

I’ve spent years cooking BBQ for the people I love. Now I want to see if I can build something out of something I genuinely love doing.

I have no idea where this journey is going to take me.

But this is Day 1.

Welcome to The Smoking Section. 🔥

Day 14: Tri Tip Series Pt 1

The challenge? Make the best tri-tip I’ve ever cooked. The judge? My bonus baby Noe, who wasn’t impressed with my last attempt. 😂

New fire, new technique, and a whole lot riding on this one. Time to see if I can earn her approval!

Follow along as I keep learning, keep cooking, and chase BBQ greatness one cook at a time. 🤙🏽🔥

Here are my 3 take away from my first pulled pork cook

1. Buy the right cut
@costco count your days ! 😅

2. Give yourself more time than you think you need.

3. Thermometers are good but check the actual tenderness with the probe

Hours on the smoker.
Fire to manage.
Temps to check.
A few moments where I wasn’t sure I had this thing right.

But after all that work… it’s finally time to find out if it was worth it. 🔥

This is the moment every backyard BBQ cook waits for.

Let’s see what we got. 👀

Pulled pork on the offset. 🔥🥩

I’m learning pretty quickly that the little things make a big difference — fire management, airflow, temperature swings, and timing.

I’m still a student of the game, and I know there’s plenty I haven’t figured out yet. That’s why I’m documenting the process instead of just showing the finished product.
