This salad is super creamy and delicious. You can include it in weight loss too. It’s high in protein. If you are vegan and don’t eat egg, then replace egg with firm tofu and replace yogurt with vegan yogurt.
.
The chopped (peeled) soft-boiled eggs
- 1/2 Avocado
- 2-3 tbsp diced onions
- 2-3 tbsp diced jalapeños
- Handful of scallions
- 2- 3 tsp Dijon mustard
- 1.5 tbsp Greek yogurt/ hung curd
- 1 tbsp chilli oil
- 1 tbsp hot sauce ( if you can’t handle spice skip it )
- 1/2 tbsp lemon juice
- 2-3 tsp sesame seeds
- Pinch of salt and Italian seasoning
.
Try it for your breakfast or brunch and thank me later.

If you want to include veggies in your diet this is the best way to do it. I also sometimes add tofu to make it high protein.

It’s 2025 and going to 2026 soon. If you still think salads are boring wait until you try this salad. It’s perfect for large party gatherings and comes together in no time.
.
You can add orange juice instead of lemon juice and add capers if you have it will elevate the flavour of the recipe.
.
Note - I have not added salt as I added in beans while blanching but if you need salt toh can definitely add it.
- make sure you Blanche your beans in heavy salted water and immediately keep it in ice cold water ( Blanche for 3-4 mins ) beans should not be mush it needs to have crunch.
- I have boiled the potatoes before airfrying it. ( Airfryer for 10 mins at 200 * )
.
Ingredients - 2 -3 handful of beans
- 3 potatoes
- 2 garlic
- 1/2 onion
- 3 olives chopped
- 1 tbsp honey
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 5-6 tbsp olive oil
- 3-4 tbsp corn
- 1/2 tsp oregano and 1/2 tsp chilli flakes
