POSTS STORIES REELS

This page has been quiet for about two years. I had a baby. That’s most of the answer.

The rest of it: somewhere in those two years I turned into the person who reads the back of the packet. First about what I was eating, then much more carefully about what I’d be handing over once my daughter is old enough to ask for it. The corporate job carried on, but baking was the thing I keep coming back to. It’s what this page was always about, and it’s what I am putting my full focus on now.

For 6 years, it’s been 𝐬𝐮𝐠𝐚𝐫𝐬𝐩𝐢𝐜𝐞𝐚𝐧𝐝𝐢𝐜𝐞, my recipes, reviews of restaurants, the odd trip. That’s not going away. But from today it’s 𝐭𝐡𝐞𝐜𝐚𝐜𝐚𝐨𝐞𝐝𝐢𝐭𝐢𝐨𝐧, and most of what I post will be about chocolate. Same person, same kitchen, new name 👩‍🍳.

What I found on the back of a chocolate wrapper 🍫annoyed me enough that I started making my own. Four bars, sweetened with dates and honey 🍯, no cane sugar in any form. Which means I have something to sell now. You should know that up front, because it changes how you read everything I post from here. One thing to be straight about: these aren’t baby food. There’s honey in them, which isn’t safe under one, and they’re a treat, not a health food.

What stays: the experimenting, the eating out, telling you when something’s good. 🥳 What changes: more labels, less plating. And eventually, an order link.

If this isn’t what you followed me for, no hard feelings at all. If you’re staying: go turn over whatever chocolate is in your house and tell me what the first ingredient is. 👇 by @thecacaoedition

recipe 🍫
a fruit and nut chocolate, but with whole nuts and honey.

you need (makes about 8 small bars):
½ cup almonds
½ cup cashews
¼ cup raisins
¼ cup chopped dates
3 tbsp honey
a pinch of rock salt
½ cup chopped dark chocolate

1. toast the almonds and cashews in a pan.
2. warm the honey in a pan. toss the nuts through it.
3. stir in the raisins and dates. add a pinch of rock salt.
4. spoon into moulds and press down.
5. pour melted chocolate into the moulds and let it set.
6. demould, and it’s ready.

ours is made with date-sweetened 50% dark, so there’s no refined sugar in it. no oven needed either.

compound, couverture or date-sweetened: what’s the difference, and what’s each one for? 🍫
compound swaps cocoa butter for vegetable fat, so it melts and sets without tempering. good for home baking, drizzles and coatings.
couverture keeps its cocoa butter. temper it for bars, dipping and bonbons, or use it for ganache.
ours is date-sweetened couverture: cocoa solids, cocoa butter, dates and vanilla. no refined sugar.
save this for your next bake. which one do you use at home? 👇

read a chocolate label in 10 seconds 🍫
1. the first ingredient: they’re listed by weight, so the first one is the biggest.
2. the cocoa %: cocoa solids and butter together. the rest is mostly sweetener.
3. the fat: cocoa butter is real chocolate. vegetable fat means compound.
4. the sweetener: sugar has many names. ours is dates and honey. no refined sugar.
save this for your next shop. what’s the first ingredient on the chocolate in your kitchen? 👇
