say hello to these gorgeous homemade scallion pancakes 葱油饼 made with lots and lots of fresh green onions!! incredibly crispy and flaky, will be devoured in no time. we found a recipe on wechat but they are all pretty similar. make sure to let the dough rest and don’t use additional flour when kneading or else the ratios will be off (oops). also make sure your chopped green onions are dry or else it will be difficult to fold in (oops again). happy september!! by @thechengscooked

happy belated 端午节 aka dragon boat festival 🐉🛶 which means homemade 粽子 zongzi! something we look forward to every year. made with glutinous rice and various fillings, wrapped in bamboo leaves, and tied with string. could be sweet or savory depending on the filling but we always make them with pork belly.

the ingredients involve a lot of preparation and folding them is definitely a learning curve but it is worth every bit! untying the string and opening up the bamboo leaves makes it feel like opening up a little present. the sticky rice soaks up all the flavor and the melt-in-your-mouth pork belly is to die for. absolutely delicious. truly a labor of love 🫶 taken in Chicago, IL by @thechengscooked

introducing snow fungus soup aka 银耳汤! this soup is so so refreshing and rejuvenating, not to mention it gives your skin a collagen boost, promotes immune system and gut health, and has anti inflammatory antioxidant benefits 😌😌

ingredients:
dried snow fungus
dried lotus seeds
dried lily bulbs
dried goji berries
dried jujube dates
rock sugar

steps:
1. rehydrate the dried snow fungus in cold water for an hour or overnight.
2. once rehydrated, rinse and use scissors to cut the snow fungus into small pieces. add to boiling water for about three minutes. drain the water.
3. add snow fungus to new pot with cold water. cover and bring to a boil, then let simmer over medium-low. stir frequently every few minutes to let the snow fungus become gelatinized so the soup has a more jelly consistency. add cold water as needed.
4. meanwhile, wash some lotus seeds, lily bulbs, jujube dates, and goji berries.
5. after the soup has been simmering for about at least 45 minutes, add in the lotus seeds, lily bulbs, and jujube dates. we didn’t do it this time but you can also add cut up pieces of asian pear.
6. after another 15 minutes, add rock sugar (sweeten to taste). can substitute for white sugar or honey.
7. after the soup has been simmering for about 2 hours, add in the goji berries.
8. cook for another 15 minutes, then remove from heat. store in fridge. enjoy hot or cold! taken in Chicago, IL by @thechengscooked
