Blanched garlic white bean purée

3 cups peeled garlic cloves
1 can white beans
1/2 cup garlic water
Olive oil
Salt and pepper to taste
Roasted vegetables for serving

Add cloves to boiling water and cook until tender, about 10-15 minutes. Reserve half cup of cooking liquid. Combine garlic, beans, salt and pepper in food processor and pulse a few times with some of#peeledgarlic the reserved garlic water. Scrape down the sides then drizzle olive oil while processing until smooth. Serve with roasted veggies.

Ever wonder how to tell the difference between California and some imported garlic? Often, garlic from overseas will have the roots cleanly shaven off, whereas California garlic will always have the remnants of the root system that once nurtured the plant. When in doubt, always be sure to look for that intact root plate because if it’s there, it’s likely California. #gogarlic #christopherranch #garlic by @thechristopherranch

This weekend, Christopher Ranch and the Gilroy Garlic Festival Association were able to hand out garlic bread to the attendees of Gilroy Gardens. We wanted to make sure everyone had a chance to enjoy the garlicky treat while enjoying the garden's Halloween offerings at the park. This weekend, Christopher Ranch donated over 3000 copies of "Elephant Garlic Halloween" to the attendees of Gilroy Gardens. On October 9 and 11, Ken Christopher from Christopher Ranch will be reading his book Elephant Garlic Halloween at Lakeside Amphitheater at Gilroy Gardens—and then giving away free books and free fresh garlic bulbs, plus free tote bags on October 30 & 31!

On all four days, volunteers from the Gilroy Garlic Festival Association will also be providing free garlic bread or ice cream in the Events Plaza (Downtown BOO Alley) during the times noted below, or while supplies last.
