✨Recipe in caption😌✨ Shortbread cookies with dulce de leche! 

1 cup softened butter (225g)
1/2 cup packed light brown sugar
1 teaspoon pure vanilla extract
2 cups all-purpose flour (280g)
1/2 teaspoon fine salt
1/2 cup dulce de leche (a store bought can is great)

Preheat oven to 325 degrees F (165 degrees C). With a stand mixer fitted with the paddle attachment or a hand mixer and large bowl, cream butter, vanilla and brown sugar for 5 minutes. Add flour & salt slowly. Mix until combined, kneading just until it comes together to form a soft dough. Wrap and chill dough for an hour in the fridge prior to shaping. Sprinkle board with some flour OR powdered sugar. Roll to 1/4 inch thickness and use a cookie cutter to make whichever shapes you desire. I use a biscuit cutter and lift them gently with a palate knife to transfer to ungreased baking sheets. Prick with a fork and bake at 325 degrees F (165 degrees C) for 15-20 minutes, cool & sandwich with 1/2tbsp dulce de leche. Enjoy with a cup of tea 😌

Meals have always been intertwined with family for Dale. She comes from a long and diverse line of ancestors, many of whom were enslaved and transported to South Africa from places like Indonesia and Malaysia, as well as the area’s first European settlers, the Dutch. “A lot of my ancestors were actually cooks in wealthy landowners’ kitchens, and so cooking has remained an important part of our history,” she said.

Easy Dinner Recipe: Chorizo & White Bean Soup

1 lb loose chorizo sausage (ofc, I’m a @porterroad fan)
2 cloves garlic, minced
1 teaspoon minced fresh rosemary 
1 teaspoon onion powder 
1/4 teaspoon kosher salt + red pepper flakes
2 cups cherry tomatoes
2 cans white beans, rinsed & drained
3 cups chicken stock 
2 cups fresh baby spinach 
1 tablespoon red wine vinegar 
Your favorite fresh chimichurri sauce, for serving 

Brown the chorizo in a large saucepan over medium heat. It’s not greasy, but no need for extra oil. Add garlic, spices, tomatoes, beans & stock. Stir and cook, covered, 25 minutes until tomatoes burst. Smash some beans if you want it thicker. Finish with the red wine vinegar, season to taste. Spoon some chimi over. Serves 4!

Was two taps away from ordering DoorDash tbh. Instead, I made this garlicky, buttery shrimp clean-out-the-fridge bowl (baby gem, Kalamata olives, tomatoes, cucumber, blanched green beans, sheep’s milk feta, red onion, lemon). Recipe below 👌

Perfect Garlic Butter Shrimp

1 lb large shrimp, peeled and deveined
2 tbsp olive oil 
2 tbsp butter 3 cloves garlic, finely minced 
1 tsp smoked paprika 
1/2 tsp onion powder 
1/2 tsp salt, or to taste 
1/4 tsp black pepper 
1 tbsp fresh lemon juice 
1 tbsp chopped fresh parsley (or 1 tsp dried or even oregano) 

Pat the shrimp completely dry with paper towels. Toss with smoked paprika, onion powder, salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Once hot, arrange the shrimp in a single layer, working in batches if necessary. Cook for 1-2 minutes per side, until pink, opaque and lightly golden. Don’t overcrowd the pan or they’ll steam instead of sear.

Reduce the heat to medium-low. Add the butter & garlic, stirring for about 30 seconds until fragrant. Toss the shrimp in the garlic butter, finish with fresh lemon juice and parsley. Enjoy! (My dressing was a simple lemon honey Dijon thrown together) 

Serve with your favorite salad, roasted vegetables, crusty bread or whatever needs using up in the fridge.

Leftover smoked ribs 🤝 Korean flavors 

This big dinner salad works because the smoke flavor pairs well with spicy gochujang and rice wine vinegar in the dressing. Keep it simple: chopped lettuce, perilla leaf, green onion, shredded carrot, pickled cucumber, gochujang sauce. 

Sauce: 2 tablespoons good quality gochujang, 4 tablespoons rice wine vinegar, 1 tablespoon sugar or honey, 1 teaspoon toasted sesame oil.

Tomato plants always get a second wind this time of year. When they seem spent in the July heat, I snip them right at ground level and leave the roots. Then in September I fertilize and they pop right back and give another round of fruit. BLT’s for breakfast, of course. And they have a thin layer of tomato jam on them! The recipe for my tomato jam is in the caption of the next slide!

These are cheddar & herb thumprints- a great way to use this Tomato Jam:

Makes about 1 cup

2 cups finely chopped ripe tomatoes
1/3 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika
Pinch of cayenne pepper

Add everything to a small saucepan and stir to combine.

Bring to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 25-35 minutes, stirring occasionally, until thick and jammy.

Taste and adjust with a little more vinegar for tang or sugar for sweetness. Let cool completely. The jam will thicken as it cools.

Keep refrigerated in an airtight container for up to 1 week.

Try it with warm biscuits, sharp cheddar and crispy bacon. #thedaleyplate taken in Mississippi by @thedaleyplate
