Enjoy dishes from @helensgraham ‘s Centrepiece at home, wherever you are.

Helen’s menu features dishes from her debut cookbook, Centrepiece, which puts veg firmly in the spotlight. The veg-led feast starts with halloumi, breadcrumbed and fried, served with a moreish spiced lemon syrup for dipping. “I’m pretty insistent when serving these that everyone must double-dip,” Helen says. There’s also paratha with a caramelised courgette dip. Next, slow-roasted sweet potatoes with amba, Medjool date butter and harissa Greek yoghurt. On the side, Hispi cabbage is served over creamy whipped tofu and drizzled with a spring onion salsa. For dessert, she crumbles halva – a sweet, sesame-based Middle Eastern confectionery – through Earl Grey-infused cream. “If you love tahini, this dessert is for you,” she says.

Enjoy dishes from @georginahayden ‘s MEDesque at home, wherever you are.

Start with Greek mezze including Kalamata olives, refreshing beetroot tzatziki, pita for dipping, and warm garlicky gigantes beans. Next, prawn saganaki risotto – “the love child of a Greek dish and an Italian dish,” as Georgina says. Her saganaki, meaning ‘little pan’, features chilli and garlic-marinated prawns, made heartier with a rich, tomato-based risotto cooked in shellfish stock, garlic and white wine. It’s finished with Odysea sheep’s milk feta, parsley and a squeeze of lemon. For dessert, Georgina recreates a favourite from her childhood: creamy vanilla panna cotta, served with rich chocolate sauce and Odysea morello cherry compote.

A seafood feast inspired by the flavours of Mexico and some of @ixta.belfrage ‘s favourite combinations. The menu starts with prawns with charred pineapple and a lime crema, all piled onto a tostada with a drizzle of spiced prawn oil. Next, chalkstream trout is baked under a generous layer of chipotle butter and finished with a fresh salsa of jalapeños and olives. On the side are cumin and ginger chips to dip into the rich chipotle butter, alongside a crisp salad with pickled shallots and a zesty lime dressing. To finish, there’s a chilli chocolate tart served with strawberries and cinnamon and coffee cream. “I love the combination of chocolate and chilli.” A refreshing hibiscus agua fresca accompanies the menu, perfect enjoyed as it is or with a splash of your favourite tipple.

@tamila_curry ‘s sharing feast begins with golden potato and green bean samosas, served with a sweet-yet-sour tamarind and date chutney for dipping.

Next come the curries. Their signature Thanjavur chicken curry – a dish from chef Prince’s hometown and a favourite with customers at their restaurants – is made with Tamila’s own spice blend, roasted and ground in-house. Alongside it is a rich, smoky paneer butter masala, made with ripe plum tomatoes and a cashew butter sauce. They’re served with fragrant spiced coconut rice and Tamila’s famous puffed-up roti, another regional staple.

The feast is completed with a summery pineapple and mango salad, finished with fresh coriander, chilli and lime dressing. “It’s quite traditional,” Prince says. “You’ll find it sold on every street.”
