Protein waffle
1 1/2 eggs
2tbs of chia seeds
2tbs of ground almonds
Gubbeen cheese grated

Creamy mushrooms, fried in olive oil in high heat with
Ground nutmeg
Ground coriander
Garlic powder
1 tb of mascarpone
Salt and pepper

Topped with fresh coriander and parsley.

A very tasty protein breakfast or brunch who keeps you satisfied for hours.

We are truly honoured to have been listed number 4 in the Irish Examiner National newspaper for the 100 best places to stay in Ireland in 2025.
In our wildest dreams we would have never imagined to be listed among the most iconic and famous places in Ireland.
We started 5 years ago as a hobby and retirement job.
We have met only wonderful people and most of our guests have become friends.
Thank you so much for praising my cooking but I’m just a simple cook using as much as possible organic, locally sourced products.
I treat people the way I would love to be treated and the world of giving it’s far more rewarding than the one of taking.

Waffles

1 small courgette grated
1 egg
4 little broccoli heads already cooked
1tbs of chickpeas flour
Plenty of herbs I freshly ground rosemary and oregano from the garden
Some cheese I added some Gubbeen cheese
Salt and pepper

You can garnish with whatever you like I made a red peppers, onions and herb de Provence fondue with garlicky sauté prawns. taken in Colla West by @thefastnet1

Such a very simple dessert to make, I used already made lady fingers biscuits, I will do my own one day gluten free.
You can find a lot of recipes some with Greek yoghurt and mascarpone, mine was made with cream chantilly.
I use Strawberries, raspberries, and freshly picked blackberries.
My biscuits were dipped in sugary rose water.
No real cooking involved, just have to let it set in the fridge for 5 h minimum or overnight it’s better.
I made a fruit coulis using the same fruits for the Charlotte.
And glazed with apricot jam for a shining look. by @thefastnet1
