Fort History Fact: The Fort’s famous Mountain Man Toast was created in 1988 by founder Sam Arnold and fellow Western historians after a day of lecturing at Bent’s Old Fort. Over margaritas, they created a toast inspired by the language and spirit of 19th-century
mountain men.

The tradition continues at The Fort today. Ask your server for a Mountain Man Toast on your next visit to The Fort.

The Fort opened on February 1, 1963, and has been serving buffalo ever since. Sam Arnold built the menu around ingredients available in Colorado at the time of Bent’s Fort. Buffalo was everyday food for mountain men, traders, and travelers during the fur trade era of 1830’s & 1840’s.. Bent’s Fort traded heavily in buffalo robes, and the tongue, hump, and marrow bones were prized as delicacies. Today, The Fort serves more buffalo steaks than any other independently owned restaurant in the country.” 🦬🏰✨

From the saloon to the supper table. A little Colorado nostalgia at its finest at @thefortrestaurant ; one hell of a fun shoot. by @thefortrestaurant

Step inside the storied world of the American frontier this fall: on November 1st, Holly Arnold Kinney takes the stage for an exclusive lecture series, bringing decades of Western history, flavor, and tradition to life.

Growing up inside a full-scale adobe replica of an 1830s fur trading post, Holly was truly destined to protect that heritage. As the daughter of founders Sam and Elizabeth Arnold, she spent her youth immersed in the early West. When the pivotal moment came to carry that torch forward, it was her husband, Jeremy Kinney, who championed her step into leadership—reminding her that The Fort was her birthright and legacy, offering the steadfast support she needed to take the reins.

Over decades at the helm of The Fort Restaurant, Holly elevated her family’s landmark into an internationally celebrated destination—from hosting world heads of state during the 1997 Summit of the Eight to earning her induction into the Colorado Restaurant Association Hall of Fame.

Beyond her storied restaurant leadership, Holly is an acclaimed cookbook author, culinary historian, and the passionate founder of the Tesoro Cultural Center, preserving Southwestern, Hispanic, and Native American heritage through education and artisan markets.

Come experience November 1st to hear firsthand from the woman who lived the history—reserve your seat and celebrate an extraordinary Western legacy! 🥂🦬

Fort History Fact: The Fort’s founder, Sam Arnold, was a television host and Western food historian who hosted the PBS series Frying Pans West from 1968 to 1986. The show explored historic Western foods, recipes, drinks, and culinary traditions, including buffalo, trout, salt pork, jerky, Native American dishes, and early Western drinks. Sam connected food to the history and cultures of the people who lived and traveled throughout the West and later published the Frying Pans West cookbook, featuring many recipes from the show.

Some restaurants serve a meal. Others offer a taste of history.

Modeled after an 1830s trading post and listed on the National Register of Historic Places, The Fort is a Colorado landmark known for its game meats and its commitment to preserving the stories of the American West. Through its Historical Lecture Series, the restaurant brings scholars, historians, and storytellers to the table, pairing regional cuisine with conversations that bring the past to life.

As we head into Native American Heritage Month, it’s an opportunity to reflect on the stories, cultures, and histories that continue to shape the American West.
