If ever there were a perfect dish for serving on a cold winter’s night, a hearty steak and mushroom pot pie would be it.

This Steak & Mushroom Pot Pie is stuffed with tender European beef from Ireland. Using Quality beef that was raised in an ideal environment makes this pie even that much better 👌🏻

Making a savory pot pie from scratch is a labor of love, and for me there is no better way to show mine. Make this on a day when you want to bake something that feels like a giant warm hug. And have fun with your mushrooms - I’ve used Bella, oyster, and maitake here, but this dish is suited to any variety.

 Steak & Mushroom Pot Pie
Servings: 6
Prep Time: 60 minutes
Cook Time: 45 minutes
Ingredients:
For the steak & mushroom filling:
2 New Yorkstrip steaks, fat trimmed off
2 tablespoons olive oil
3 slices bacon, chopped
1 cup Yukon gold potatoes, cut into small cubes
1 sweet onion, sliced thinly
3 cups mushrooms, quartered(use any assortment of mushrooms - here I’ve used Bella, oyster, and maitake)
2 cloves garlic, minced
2 sprigs rosemary, finely chopped
⅓ cup all purpose flour
3 cups beef stock
Salt and pepper, to taste
For the pie crust:
2½ cups all purpose flour
¼ teaspoon salt
¼ cup shortening
12 tablespoons (1 tablespoons ½ sticks) Butter, cold and cut into small cubes
¼ cup + Ice Water
1 egg, beaten

Directions:
1.  To make the pie filling:
Slice the steaks into 1” cubes.
2.   Heat the olive oil in a Dutch oven over medium high heat. Add the beef and bacon and cook, stirring every 30 seconds or so until the beef is golden brown. Use a slotted spoon to move beef and bacon into a bowl and set aside.
3.    In the same pot the beef was cooked in, continue to cook on medium high heat and add in the potato, onion, and mushrooms. Sauté for 4 to 5 minutes, or until onion becomes translucent.
4.    Add the garlic and rosemary to the mixture and sauté for 30 seconds. Add the flour and stir in. Cook, stirring constantly for two minutes.
5.    Add the beef stock to the pot and stir in until combined. Continue to cook until the mixture thickens.

I tried a new type of grape in my juicing escapades this season - Marechal Foch. Turns out the grapes didn’t fare quite as well as hoped, just like all the other fruit in northern Utah.
This did leave me with a new(obviously hardy) variety to try.
These were somewhat similar to concord…isn’t the color lovely?!
.
For all you grape juicers, I have a blog post on how to make homemade grape juice that I’ve just given a facelift - I tell you all about how to make grape juice with a pot and strainer or a steam juicer over there.
.
Happy last day of September!

I never would have guessed that this Irish Apple Cake with Custard Sauce would be my most popular recipe of all time when I first shared it 12 years ago.
But, here we are, so I decided it was high time it got a facelift. Swipe to the end for the original photo that is oh so very 2014 :).

The changing of seasons always triggers a craving for toasted fig leaf syrup. It’s nothing like you would think…almost like coconut, but subtler. If you have access to fig leaves, you should definitely give it a try. It’s wonderful in a latte 😊

Fig Leaf syrup

10 fig leaves
11/2 cups granulated sugar
2 cups water
Preheat the oven to 350 degrees Fahrenheit.
Place the fig leaves on a baking sheet and toast in the oven for 6-7 minutes, or until curled up and dry.
Remove and set aside.
Add the sugar and water to a saucepan and bring to a boil, stirring constantly until sugar is dissolved.
Crumble the toasted fig leaves into the saucepan and continue to boil for 5 minutes.
Remove from the stovetop and let sit for a few hours.
Strain and bottle.
Will keep in the fridge for up to a month.

There are no apples this year.
Not here in Cache Valley, anyway.
A late frost wiped out the buds and left the trees leafy, yet barren.
Aren’t we so lucky to live in a world where fruit is always growing somewhere else, and beyond that - makes it’s way to us without our own intervention.
Next year, I’m sure the trees will be full again and I’ll pick a basket full in an orchard somewhere near.
For now, I’m grateful for these beauties, regardless of origin. Apples are my favorite ❤️ taken in Cache County by @thekitchenmccabe

It’s your friendly seasonal reminder - grapes are ready for picking and I can tell you all about how to turn them into juice…the easy way. Search “grape juice” in the blog archives.
I’m waiting for the Reliance variety to ripen so I can make this perfectly pink version. I love it because aside from the stunning blush color it produces, you also don’t need to add a drop of sugar. 🙌🏻✨
