An autumn favourite, this Squash, Kale, and Sausage filling works perfectly in jumbo shells, cannelloni, manicotti, or even as a sauce over penne etc. πŸπŸŒ»πŸƒπŸ‚ The sage bΓ©chamel sauce and shredded mozzarella create the required amount of cheese pull! This is a great main meal, or even a side dish on a table set for a feast. . I had some wondrous Italian pickled shallots from @italfoodsottawa so I added them to the filling this time around, their tang really balanced the rich nature of the filling. I'm revising the recipe to include them! Of course, pickled red onion will work in a pinch. And the fennel as I sautΓ©ed the Italian Sausage was amazing, thanks @cheese_boutique . Feel free to make the filling in advance. Assemble a second baking dish with the recipe, and you can even freeze it for a future cozy winter meal. . All tips are in the recipe on the blog. . . Caesar Potato Salad with Parm Crusted Chicken Cutlets. πŸƒπŸ₯¬πŸ₯”πŸ§€πŸ‹πŸ— Before September and all the early autumn cooking hits our feeds, we're squeezing in a few more summery salad mains. . This one is so easy. I used my Caesar Pasta Salad recipe as the jumping off point, just subbing out the pasta for baby new potatoes. Once they've simmered and are just knife tender, drain them and toss in some of the dressing. As they cool, they will absorb the dressing, getting a head start on heaps of flavour! My easy go-to cutlet recipe is also included in the recipe. . To access it, just use the Drop Down Search Bar linked on my profile page. You can also DM me for the direct link. It doesn't get more August than tomatoes and peaches! Here are aome of our favourite ways to enjoy the fragrant and juicy bounty right now! πŸƒ πŸ… Bruschetta Pasta. Take those classic bruschetta toppings and turn them into a 'sauce'. In the time it takes for you pasta to cook, dinner will be done! πŸ… Tomato Peach Caprese Salad. Peaches and tomatoes get along so well. Add them to your next Caprese, your tastebuds will thank you! Take that Caprese to the next level with some torn prosciutto, cucumber ribbons and nuts, and you have a perfect first course, or a summery luncheon meal. πŸ… Levantine Inspired Garlic Tomatoes with Sumac. These aromatic and flavour-packed jammy tomatoes are a perfect side, for morning eggs, or with grilled meats or fish. πŸ… Tomato Pie. Think of this as a cross between a BLT and quiche! Layers of cheesy goodness, roasted tomatoes, bacon, spinach, basil etc. Perfect for brunch or dinner. πŸ… Classic BLT. These are on repeat for the foreseeable future, or till the tomatoes run out! Add some heat to your mayo for extra oomph. Slices of peaches in with the tomatoes also works fabulously. . . DM me for direct links to any recipe links. Ploughman's Lunch, but make it Mediterranean. πŸ–πŸ§€πŸ₯šπŸ«œπŸ₯’πŸ« Long before Girl's Dinner there was the Ploughman's Lunch. A plate loaded up with meat, cheese, pickled veg and a hunk of bread, a simple lunch for ones heading to the pub on their lunch break. The first time I had one was back in the 80's, and it totally made sense to this German girl! . This time around I used what was in the fridge and pantry, and realized a theme was emerging. A definite Mediterranean vibe was taking place. Some prosciutto, olives, marinted artichoke hearts, feta and fresh tomatoes were joined by pickled eggs, my pickled beets, and a can of sardines. πŸŠπŸ“πŸ₯“πŸ₯šπŸŸ The pickled egg recipe can be found on @julesfood homepage. I'll post the pickled beets recipe in my Stories. If sardines scare you try this: look for sprats, brisling sardines, or Portuguese sardines: they are often smaller, and have a very mild flavour. Smoked Sprats have a beautiful flavour, just pop a few on a cracker or crostini and top with La Bomba spicy spread! . I was craving Creme Anglaise, so I baked an Apricot Tart. To me, Creme Anglaise, or Vanilla Sauce, is one of life's simple joys. A drizzle of that creamy vanilla scented goodness goes so well on fruit, crepes, pies, even chocolate cake. Or, to be honest, just a spoon and the jar is all I need! . This simple Apricot Frangipane Tart is a joy to make. The shortcrust pastry is easily gluten free, the puffy almond cream filling is a joy to whip up, and the fresh apricots turn into perfect silky puddles in the oven as the filling puffs up around them. Switch out the apricots for nectarines, peaches, even plums, and it's an easy dessert for the whole summer! . The recipe is new to the blog, although the Creme Anglaise recipe can also be found in my book πŸ˜‰ Find it by using the Drop Down Search Bar linked on my IG homepage. Feel free to DM me for the direct link. Or copy and paste the following into your browser https://thelemonapron.com/apricot-frangipane-tart-with-vanilla-sauce/ . The perfect summer cheesecake doesn't exis... Yes it does! This Uber Lemony Cheesecake just sings summer. πŸ‹β˜€οΈ Use your favourite cookie crumbs for the base, from graham to biscoff to gingersnap, they all work. I'm not saying you'll pucker up, but the filling is undeniably lemon! Guaranteed not to crack, this cake bakes up so easy breezy. Once cooled, top with lemon curd and fresh fruit. πŸ‹πŸ“πŸ«πŸ₯πŸ‡πŸ’πŸƒ And the recipe is so easy to modify to a mini 6 inch cake, which I often do, for just a small group. The recipe includes the link to my homemade lemon curd, which is pretty irresistible! . What do you get when you combine noodles, fresh veggies, a creamy peanut sauce, crispy rice and tender shrimp? The salad that I'll be living off of for the next few days. . It's so easy to prepare in advance. Β°Use your favourite Satay Sauce or Thai Peanut Dressing. You can find mine on the blog, use 'Satay Sauce'. Β°Clean out the fridge of whichever veggies are lurking within. Slice as desired. My favourite go-to's for this style of salad will be red bell peppers, sugar snap peas, cucumbers, radishes, carrots, cabbage, even sea asparagus and whatever sprout you fancy. Β°Prep some shrimp, salmon, tinned tuna, or even rotisserie chicken. Β°My crispy rice recipe is below and will keep for a few days in the fridge. Β°Top the salad with chopped toasted nuts or sesame seeds. . Crispy Rice 2 cups cooked and chilled rice. You can use basmati, or even a wild rice blend as I did here. Place the rice in a bowl with: 1 tbsp soy sauce or coconut aminos 1 tbsp chili garlic sauce 1 tbsp chili crunch 1 tbsp toasted sesame oil 1 tsp rice wine vinegar Toss everything. Spread out on a baking sheet Bake at 400F for 30-40 minutes. Allow to crisp up in the pan after removing it from the oven. Cool and store in a sealed container. . | crispy rice | peanut sauce | summer salad | fresh vegetables | Thai flavors by @thelemonapron
Save, an easy, simple lemon sauce below. πŸ‹ A few weeks back we foraged for ramps. A lot of our bounty got turned into ravioli! Two kinds: Ricotta and Ramp, and Turkey and Ramp. The freezer is now filled with bright and Springy pasta. I've been serving them up with a bright lemon sauce. Sweet and nutty Fiddleheads are showing up at the markets right now, and they pair perfectly with the pasta and sauce. If you can't find fiddleheads, no worries, fresh steamed asparagus, green beans, spring peas, or even finely sliced baby spinach stirred in at the end work as well. πŸŒ±πŸŒΏπŸ«› If you do pick up fiddleheads, always remember to trim away any brown edges or leaves, and boil or steam them for 10 minutes to ensure they are safe to eat. πŸ‹πŸ§„πŸ§€ For a simple lemon sauce for two to three (make while the pasta is cooking): Combine 4 tbsp of butter and 3 tbsp of olive oil in a pan over medium heat. Add the juice of one large lemon, the zest of two lemons, and three medium finely minced garlic cloves. Add a pinch of red pepper flakes, and black pepper. Cook for about three minutes. Stir in 3/4 cup (180 ml) heavy cream (feel free to replace up to 1/4 cup or 60ml with stock), and plenty of freshly grated parmesan cheese. Allow to thicken slightly. Finish with more lemon juice and cheese as desired. The above amounts are the basic sauce, feel free to add more lemon, garlic, pepper or cheese as desired. . Pro tip: add the squeezed out lemon halves to the pasta water while the pasta is cooking for extra lemony goodness! . | lemon sauce | homemade ravioli | foraging | wild leeks | ramps | fiddleheads | spring cuisine | by @thelemonapron
The end of an era... The classic city diner is a dying breed, and I'm sad about it. This is the Patrician Grill. A family owned restaurant, around since the 1950's. Jim and I have been eating here for 25 or so years. Terry and Chris kept us well fed, with pure comfort food. I will miss Chris' soft scrambled eggs! . My own personal opinion: Toronto is filled with trendy, chi-chi places to eat, more concerned about looking good for IG posts, than just serving good food. These trying too hard spots pale in comparison to the family establishments, the inconspicuous places, with a mum or dad cooking in the back. Give me a hole in the wall diner vs the flavour of the month lounges and restaurants serving mid food that will be forgotten in a few years. . One last breakfast, thanks guys. All the best for your retirement. . Patrician Grill | Toronto | diner by @thelemonapron
It's Ramp Season! Those fleeting few weeks in Spring where these wild leeks or wild garlic can be found, hidden growing amongst tree roots in the bush, away from civilization. 🌱🌱🌱 We foraged enough for the season, leaving enough behind to grow for years to come. The first thing I made was my Ramp Pustachio Pesto. I thinned it out a bit and added it to this Spring Roast Chicken and Orzo. Use your favourite Spring vegetables in this dish, they'll all work. πŸƒπŸŒ±πŸ«›πŸ— There are many more Ramp recipes on the blog, including my Pesto Cheddar Ramp Biscuits, and Pickled Ramps. Today I'll be making Ramp Ricotta Gnocchi or Gnudi. It's a gloomy day, perfect for making gnocchi. To access these and more Ramp Recipes, just use the Drop Down Search Bar linked on my IG profile page. Use 'Ramp'. Or feel free to DM (message) me and ill send you the direct links. . The joy and cozy flavours of a classic cinnamon roll, but without the work of making a yeasted dough, and proofing. These Cinnamon Roll Scones are tender, light, and a perfect weekend breakfast treat, with a cup of steaming coffee or Chai. They can be rolled and baked while you make coffee. Leftovers warm up easily to become fragrant and tender again. I add a little cardamom and pearl sugar for Swedish Kardemummabullar vibes. But you can do a simple glaze or drizzle afterwards if you'd rather. . To access the recipe just use the Drop Down Search Bar linked on my profile page. Use Cinnamon Roll Scones.
