Not Champagne. Something a little different!

Famille Bougrier Vouvray Brut Méthode Traditionnelle Chenin Blanc from the Loire Valley. Same method as Champagne, completely different grape, completely different story. And honestly? More interesting than most Champagnes I've had.

Crisp, clean, green apple, lemon zest, white flowers, and bubbles that just keep going. This is the bottle you bring when someone says they don't like Champagne. Watch them change their mind in one sip.

Cava has been done dirty for too long. Let me fix that.
Champagne uses French grapes. Cava uses Macabeo, Xarel·lo, and Parellada, the three Spanish native grapes grown in Spanish soil. Same method. Completely different DNA. Cava was never trying to be Champagne. It never was.

Jaume Serra Cristalino Brut. 92 points. Crisp, dry, green apple, citrus, with that beautiful nutty finish from lees aging.

This is what good bubbles look like without the Champagne price tag.

Real talk from the couch: Sauvignon Blanc is my favorite varietal of all time. I'll drink it from anywhere on the map. So a jalapeño Sauv Blanc? I had hopes.
The citrus is there. It's light-bodied, bright grapefruit, lemon, all the things I want from this grape. And then the jalapeño rolls in and steamrolls every bit of it. For me, sipping it straight just didn't land.

But a miss isn't a loss. We don't waste good alcohol around here, we upgrade it. That same heat that overpowered the citrus is exactly what a margarita spritz needs:

HOTTIE BLANC JALAPEÑO MARGARITA SPRITZ

3 oz Hottie Blanc Jalapeño Sauvignon Blanc
1.5 oz blanco tequila
1 oz fresh lime juice
0.75 oz orange liqueur
0.5 oz agave (to taste)
Splash of soda water
Tajín rim, jalapeño slices, lime wheel

Rim, ice, shake the tequila/lime/liqueur/agave, strain, top with the wine and soda. Done.
And listen...someone out there is going to love this bottle exactly as it is. No shade. More for you!
