Let's make it! You will need:

1/2 an avacado
3 tbls. white shredded cheddar cheese
2 tbls. American Spoon Tomato & Cilantro Salsa or your favorite salsa.
salt n pepper to taste
1 tbls. chopped parsley (optional)
1 tbls. olive oil or a little butter if you prefer
1 egg
1 small slice baguette or toast

*mash avacado in the center of a small microwave safe plate. top it with American Spoon Tomato & Cilantro Salsa - the best!
top salsa with 2 tbls. of the cheddar cheese. salt n pepper to taste and set aside.
*next, heat a small pan to medium on stove top. add the olive oil or a little butter to the pan. once heated, crack the egg into pan, salt & pepper to taste. I like to add fresh chopped parsley too! top the egg with remaining cheddar cheese and cook until the whites are set and it's easy to flip - about 3 minutes.
while the egg is cooking, place the avacado plate in the microwave and heat on high for about 12 seconds until cheese looks slightly melted, then set aside. gently flip the egg for about 12 seconds to set the yolk and melt the cheese. you want the yolk to remain a bit saucy. flip egg over onto a plate, cheese side up. using a spatula, place mashed avacado on top of the egg. plate a small piece of bread or toast to sop up the yummy yolk!
