המשקה השני שהוגש אתמול בפופ אפ אצל @nowpottery כולו על טהרת השקד בכל צורותיו.

מאצ׳ה ״אמריקנו״ על בסיס מי שקדים בזיקוק ביתי, מריחת חמאת שקדים מלוחה קלות על הכוס, מוגש בצד עם שקד ירוק חצוי לשניים לזסט עונתי חמצמץ.

תודה ענקית לכל מי שהגיע, פוסט סיכום האירוע יעלה בהמשך ❤️
בינתיים רוצו ל @nowpottery כי האירוע עוד קורה וישנם אנשים מדהימים שמציגים ומוכרים את מעשה ידיהם!

אוריינטל ביוטי הוא תה שנחשפתי אליו לראשונה במסעותיי בטאייוואן רגע לפני שהמלחמה התחילה, ומאז הארומה הדבשית שלו לא יצאה מראשי. התה המיוחד הזה מתגונן מפני חרק המנשנש את עליו וגורם לו להתחמצן במהרה ולשחרר ארומה מתקתקה ודבשית במיוחד, דבר שסיקרן ואהבתי במיוחד.

את התה המשובח הזה, שאצרו נדי ופינק מ @hoyumtea בצפון טאיוואן בקיץ שעבר, בחרתי לחלוט בחליטה קרה ולצוות אותו יחד עם קציפת חרציות צהובות, הגדלות בכל מקום שהעיניים שלנו רק מסתכלות לעברו.

את המשקה תוכלו להשיג בשישי הקרוב ביריד Craft on Site המתקיים בסטודיו Now יחד עם מגוון של יצרנים קטנים מוכשרים אחרים, לאורך כל הסופ״ש.

פוסט הערכה ל-hoji ember ☕️

לאחר שנגמר לגמרי (!) תוך פחות משעתיים לתוך הפופ אפ שהיה לפני כשבועיים, משקה ההוג׳יצ׳ה הקטיפתי הפך במהרה לאחד האהובים עליי ועל כל סובבי שטעמו אותו.

ומה יכול להיות מנחם יותר ממאג מלא במשקה דגני חם וקטיפתי שיחמם אותנו מבפנים בזמן שקורל מראה את פניה הקרירות?

Last weekend lounge with Nadi and Pink before continuing their travels eastwards to source some tea for this Spring’s harvest 🍃

Enjoyed some great company, practiced my Gongfu brewing skills (which I will tell about in a separate post) and tried Indian Darjeeling tea for the first time, which happened to be super floral, light and decadent.

The Ho Yum Tea pop up here in Jaffa unfortunately has come to an end, but the studies, the flavors, the fun and the memories will stay with us for a long time.

וואו, איזה כיף ענק זה היה!

עם סולד אאוט על כל המשקאות הארטיזנלים של האירוע (!) פגישה עם אנשים מדהימים והתלהבות וחנוניות משותפת על תה יפני ותרבות קולינרית- זאת זכות ענקית להיות השער שלכם לעולם של תה יפני, ולחבר בין טעמים יוצאי דופן, אנשים מעוררי השראה, והסיפורים המדהימים שמאחוריהם.

With notes reminiscent of cacao and toasted grains, this full bodied roasted green tea powder creates the perfect conceptual sketch for a velvety and comforting french hot chocolate.

This hojicha is paired with oat milk to emphasize its roasty-toasty notes, then topped with a semi sweet whipped cream and a few sugar crystals formed by a mistake made when candying the cypress branches.

matsu fizz まつきらめき

Drawing inspiration from Matsu, the Japanese word for pine tree, I ventured into the forest where pines and cypresses grow side by side and their aromas are blending in the breeze.

This locally foraged cypress syrup is elegantly paired with the deep, roasted notes of @matchaeologist ‘s matsu matcha blend and crisp sparkling mineral water. Topped with a candied cypress branch, inspired by the talented confiserie @hila.hochman.confiserie

The best cups are crafted and served with the best kind of attention to details.

Doodled this matcha latte at work yesterday, after months of trying to perfect the right technique and ratio to a well balanced, creamy and easy-to-latte-art-on cup of the green milky tea. What do you think- Did I make it?

At @hoc.telaviv the beauty is in the details. Working with the finest products and embracing the journey of constant learning and growing, is both a privilege and an inspiration to me.
