join us as we blind taste test and guess the cultivars of this yame single cultivar matcha set from @naokimatcha! 🍵✍️

i sat down with my matcha friend from @brewcha.tealounge to try out 4 single-cultivar matchas from yame, japan, to try and figure out the notes of each matcha and then guess what each matcha’s cultivar is!

The cultivars in the set include 2 common cultivars (okumidori and yabukita) and 2 rare cultivars (seimei and kirari) and it was such a delight to get to taste test and compare each one side to side!

i was grateful to receive this special edition set! naoki matcha will only be releasing 490 sets in the states, so grab your set while supplies last!

a sweet summer drink with a little kick 💥🍓

let’s make a strawberry sichuan peppercorn sparkling matcha! 🍵✨

ty to my lovely friend @szabbie.roe for making this syrup for me to try in a recipe!

using @yokomatcha today! use THEMATCHAMIX for 10% off your order!

to make the strawberry sichuan peppercorn syrup, boil 1 c sugar, 1 c water, 1 c cut up strawberries, and 1g (or more if you prefer more of a kick) sichuan peppercorn and let simmer for 10 minutes, then strain and let cool.

sift 4g matcha powder and add 15 ml water to make into a paste. add 175 deg F 30 ml hot water into the chawan and whisk vigorously for 30 seconds before achieving microfoam in the following 30 seconds.

in a glass, pour in 30 ml syrup, followed by ice, then your strawberry or regular sparkling drink of choice (i chose la croix), then your matcha.

let’s make an assam milk tea hojicha latte! ☕️🫖

using hojicha powder from @wako_matcha !

to make the assam black tea syrup, boil then simmer 1 c water, 1 c sugar, and 4 tea bags assam tea for 10 minutes in a pot, then let cool.

sift 4g hojicha powder and add 15 ml water to make into a paste. add 175 deg F 30 ml hot water into the chawan and whisk vigorously for 30 seconds.

for the assam cold foam, add in 10 ml assam syrup with 30 ml heavy cream and froth with an electric frother for 1-2 minutes.

in a glass, pour in 20 ml syrup, followed by ice, then 90 ml oat milk, the hojicha, and top with the cold foam and assam tea leaves.

the perfect summer drink. ☀️🍵

let’s make a plum matcha!

using oishi ceremonial saemidori matcha from @nio_japanese_green_tea!

use THEMATCHAMIX for 15% all nio tea orders!

cut 6-7 plums into quarters and simmer for 10 min in a pot with 1 c water and 1 c sugar, then strain.

sift 4g matcha and add 15g room temp water to make a paste, then 30g 175°F water. whisk vigorously for 60 seconds.

pour in 60 ml of plum syrup to a glass, then ice, then 90ml oat milk. top with matcha and then garnish.

hey colorado! come with me as i try to find the best matcha in the state. 🍵

and guess what, colorado springs? we now have our second ever specialty matcha spot serving up some incredible matcha creations!

i met with cassandra, the owner of hoshi matcha, a pop up stand, and she gave me the inside scoop on their matcha, and which is a single asahi cultivar sourced from uji, japan (+ first leaves, spring harvest, say less! 😍). they use a standard ratio of 4g in all of their matchas, except for their double matcha, which is a whopping 8g and not for the faint of heart! we grabbed a coconut cloud and a guava latte, and when i tell yall i could not put that coconut drink down, i mean it! this and the guava latte both get a 10/10 for me!

if you ever get the chance to stop by their pop up, i highly, highly recommend this spot. check out their Instagram for upcoming dates and locations!
