Sea cucumber has always been one of those ingredients I wanted to approach a little differently

Alaska red sea cucumber.
Turbot.
Santa Barbara uni.
Roasted white scallion-abalone sauce.

Built around texture more than anything else.

Crisp outside.
Soft center.
A little sweetness.
A lot of umami.

The most nostalgic Chinese dish 🍅tomato & egg

Started with the classic stir fry, extracted the liquid into a tomato jelly, stuffed a peeled compari tomato with steamed egg custard “chawanmushi” style, buckwheat puffs and a hk eggette tuile for texture

Didn’t want to reinvent it, take a bite, smile, and go…

“Wait… that’s 番茄炒蛋”
