Saying good-bye to a place he called home for the last 2 years. Crazy how fast it came and went but he is officially an upperclassman. 💜 GCU…thank you for the highs, the lows, the lessons, the successes, and the people you brought to his story. Couldn’t have asked for a better place to start his college journey. Now it’s time to see what God has planned next… taken in Grand Canyon University by @theortegalife

A 2.5 mile run walk to start my day was not fun but did I die? No but I sure felt like it after I was done!

The holidays are officially over at our house. 🥺 Shelves feel empty without figures, fireplace looks bare without stockings, corners look lonely without trees and night seems too dark without the glimmer of twinkling lights. But what a beautiful holiday season it was! Celebrating milestones, holiday activities and spending time with family & friends. Is it too early to count down til our next one? 😂

Make Tuscan Chicken for dinner with me…so easy, quick and good, you’ll wish you made more!

1 tbsp olive oil
4 boneless chicken breasts
Salt
Ground black pepper
1 tsp dried oregano
3 tbsp butter
3 cloves minced garlic
1 1/2 cups cherry tomatoes, halved
3 cups spinach, lightly chopped
1/2 cup heavy cream
1/4 cup grated Parmesan
Lemon wedges (optional for serving)

Drizzle olive oil on a skillet over medium heat. Once hot, place chicken pieces down and sprinkle with salt, pepper and oregano. Brown for about 3-5 minutes, turn over and repeat. Chicken will be done once thermometer is at 185 degrees in thickest part of meat or meat is white when cut. Remove from pan and put aside.

Using same pan, add butter and melt. Add garlic and cook for 1 min. Add tomatoes and season with salt & pepper. Cook until tomatoes skin are beginning to break then add spinach. Cook until spinach begins to wilt.

Stir in heavy cream and Parmesan and bring to simmer. Reduce heat and simmer until sauce is slightly reduced (about 3 mins). Return chicken to skillet and cook until heated through about 5 mins. Serve with lemon wedges.

Since I needed 6 servings, I doubled my ingredients except to double the chicken, I sliced in half, flat longways. Instead of returning chicken back to skillet towards the end, I poured the sauce on top of the chicken when plating.

So DELICIOUS!!!
