I’ve been away for a little while (nobody’s shocked🙄🥴) busy per usual! Made fish tacos for dinner tonight and… not to be dramatic but one of the best meals I’ve made in a while!!! Here’s what I did:

Coated strips of cod in batter
Fried until golden in canola oil on medium low heat
Served on lemon habanero coleslaw & toasted corn tortillas

Pretty darn simple. Totally TASTY!!!😍🤤🥳🤩☺️🤍

About 4 servings
Ingredients
Batter:
1 c flour
1 large egg
1/2 can plain sparking water
1 tsp rice vinegar
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili salt
1/2 tsp baking powder
Pinch of ginger powder
Pinch of turmeric powder (for color)

2 fillets of cod cut into reasonably sized sticks

Coleslaw:
2 handfuls of mixed green & red cabbage
2 tbsp mayonnaise
1 tsp (vegan) cream cheese
2 tbsp habanero relish liquid (recipe coming soon)
^ or you can use white wine vinegar and your choice of spice
About 2 tbsp lemon juice or to taste
1/2 tbsp garlic powder
Salt to taste

A real Irish breakfast on this rainy morning. Nothing makes me miss my granny like the rain. She would love this🤍✨

Sourdough toast, with crispy over-easy eggs, homemade pesto, sautéed crimini mushrooms & marinated vine tomatoes. Only thing missing is a cup of tea… brewing it now!
