COD FISH TACOS- 1 lb of codFor the seasoning:- 2 tsp paprika- 2 tsp garlic powder- 2 tsp onion powder- 1 tsp salt- 1/2 tsp black pepper For the mango salsa:- 1 large mango diced- 1 lime juice- 1/2 cup diced tomatoes- 1/4 cup red onion diced- 1/4 cup chopped cilantro- 1 tsp salt For Greek yogurt crema:- 1/2 cup Greek yogurt - 1 tbsp mayo- 2 tsp agave- 1 tbsp cholula - salt to taste Slice your cod into small pieces (about 1 inch thick) and generously coat with your seasoning. Heat a frying pan to medium, add avocado oil and place your cod fillets. Cook for about 2.5 minutes then flip and cook for 2.5 min on the other side. In a pot, melt butter, miso paste and honey to make a glaze. In a bowl toss the sweet potatoes in the glaze coating them evenly. In a cupcake tin, layer the potato slices from big at the bottom to smaller ontop. Cover with tinfoil and bake at 400 degrees for 20 minutes then uncover and bake for additional 20 minutes. Remove the stacks from tin and top with hot honey (honey mixed with red pepper flakes) and sliced green onions.
