Beer from here.

That’s our journey. Not long ago beer made from local / regional ingredients would have been the norm. The vast majority of beer styles were created in this way.

Today - it’s very very unusual. Almost no one will have experienced a beer made with local ingredients.

In a matter of days we will be releasing beers made entirely with ingredients from Santa Barbara County. Made from ingredients farmed by us in Los Olivos. It’s a dream come true.

Most of you know we have been growing grains for around 10 years.

About three years ago we built the trellising for a hop yard, adjacent to the wheat field at the ranch.

Two years ago, we purchased about 800 hop seedlings and rhizomes and planted them.

Last year was our first harvest. It was meager. The plants were small. We harvested a few bines, dried them in the cellar with the lambic and used them on the cold nights in our lambic wort.

This year the 400 seedlings grew strong. Over 15 feet in the air. In September the air around the hop yard was full of hop aromatics influenced by the year’s weather and our soil.

Zak from Thomsen Hops in Tracy, CA, was kind enough to teach us how to evaluate hops for moisture content and determine the perfect time for harvest.

When the lupulin of the hops was maximized and the moisture content where we wanted it, Eric, Tracey, Garrett and I cut the bines down from wires while standing on the back of the flatbed. From the flatbed the bines were loaded into the winery’s box truck and driven straight to Thomsen Hops in Tracy, California.

We yielded enough hops to create about 2000 gallons of estate Pilsner, and 300 gallons of Pale Ale.

The Pale Ale was created with Vista hops from the ranch. We drove those straight to our friend Ryan at Wild Fields who created a Pale Ale with them.

The Pale Ale will be on draught at Third Window Brewing and Wild Fields this weekend.

The estate Pilsner will take a bit longer as it has to be cellared. The estate beer will be the first beer crafted from entirely Santa Barbara ingredients in decades… perhaps a century? We’ve never heard of one - much less tried one.

Only a few weeks more to wait.

Saison Automne 2026 — the third release in our yearlong collaboration with @sbbotanicgarden , celebrating the Garden’s centennial.

Our Farmhouse Saison, brewed with malt and wheat grown here on the FP Farm, was re-fermented with our mixed culture of Brettanomyces and Lactobacillus. During secondary fermentation, we gathered white and black sage from the Garden, brewed the leaves into a concentrated tea, and added it to the blend. The beer was then bottle conditioned with Cuyamaca Valley wildflower honey.

Sage tea with honey felt like autumn here.

White sage brings a cooling herbal character; black sage, savory pine. The wildflower honey lends floral and fruit notes against a light, effervescent body and dry finish.

Golden orange in the glass, with aromas of wildflower nectar, fresh pine and black pepper, followed by honeyed grain, wildflowers and summer fruit blossoms.

Saison Automne 2026 is available now at the Farm in 500ml and 750ml bottles, while this season lasts. taken in Santa Barbara, California by @thirdwindowbrewing

Thank you to everyone who nominated us @sbindependent for Best Santa Barbara County Brewery, Best Burger, and Best Chicken Wing.

The food side of Third Window started pretty simply. During the pandemic, out of necessity, we started making burgers with Wagyu from the ranch. We cooked a lot of them, learned through repetition, and for a long time only served food a couple days a week. What started there has slowly grown into the full kitchen operation we have today.

On the brewery side, we continue to believe the future is in specialization- focusing on the things we have access to, the things that make this place unique, and trying to do those things exceptionally well.

There’s still a lot we want to get better at, which makes recognition like this especially meaningful.

Tonight is the last chance to vote. If you’ve already taken the time to support us, thank you. We’re grateful to be considered alongside so many great people and businesses in Santa Barbara County. by @thirdwindowbrewing

This is our third year growing hops at the ranch. Each year the bines get bigger, the roots get deeper, and we learn a little more about what it takes to cultivate hops.

The long-term goal is to create beer that is of this place.

This year’s hops have grown bigger than ever. In a few places, bigger than the trellises holding them up. A couple collapsed last week. This week we’re pounding in new posts to re-stretch the lines.

Our focus on brewing is narrowing to beer made with unique local ingredients - lagers and saisons made with unique ingredients often cultivated by family and friends.

Still a lot to learn, but each year gets us a little closer. taken in Los Olivos, California by @thirdwindowbrewing

Thank you to everyone who joined us at the ranch to celebrate ten years of Third Window.

It was an afternoon we’ll remember for a long time—from the beer and food to the music, conversations, and the chance to gather with so many of you who have been part of our story. We’re incredibly grateful to everyone who came out to celebrate with us.

And because we already can’t wait to gather again...save the date: September 26. We’ll be back at the ranch to welcome the harvest season. More details to come.

We’re honored to be collaborating with the @sbhistoricalmuseum as it opens Finding Saint Barbara, a new exhibition dedicated to St. Barbara, the patron saint of our city, whose defining symbol—the third window—inspired the name of our brewery.

The exhibition features our collection of Abbey-style beers, whose labels tell the story of St. Barbara through imagery and words.

We’re also excited to be the beer sponsor for the Fiesta History Celebration on Thursday, July 23rd—the exhibition’s opening party commemorating one hundred years of St. Barbara’s presence in Fiesta celebrations. by @thirdwindowbrewing
