Noodles 🍜 take a precise 72 hour journey to unfold 🕒 The process is a daily ceremony. Marry and blend the ingredients, add water, declump the wet flour, press into dough, fold longitudinally and laminate the dough. Do this again. And again. And once more again. The dough is then rested for strength, cut to its final shape and then re-rested for a minimum of 48 hours to allow flavors to meld and texture to perfect before cooking and serving. 🍜 This meticulous process is more than a procedure. It’s a testament to the deep passion for ramen. Years of refinement, countless bowls tasted and tweaked, have led to this; a recipe that demands not just skill, but a profound intimacy and artistry that are brought to life daily in Toya’s kitchen. Tucked away in the back of the restaurant stands the noodle machine. At first glance, it appears untouched, gleaming as if brand new. Yet, a closer look reveals that it is used daily, its spotlessness a mark of the meticulous care with which it is maintained. Noodles in Chef’s culture are more than a dish, they symbolize longevity and a life well-lived.
