A note on the humble Buttermilk Biscuit.

The first ever biscuit I made was for staff food in the first kitchen I worked in when I moved to London in 2020. I was homesick and craving a bit of southern comfort in the midst of a cold London Autumn. We had smoked cheddar in the fridge that was going on another dish so I thought I’d make a smoked cheddar and chive version to go with a chili con carne. Ever since then they’ve weaved their way in an out of many restaurant staff foods and without fail have made it onto my Thanksgiving menu every single year. It’s taken quite a bit of recipe testing to get it to where it is today and It’s pretty dang cool to see them on the bakery menu now and having so many people on this side of the world enjoying a food that is a staple in southern culture in America.
If you swipe all the way, the last two photos are from that first ever biscuit I made in a kitchen in Bermondsey before dinner service on a cold November evening. by @tiffy_kuk

Delica Pumpkin, Goats Cheese, and Sage Galette 🎃

Creamy delica pumpkin emulsified with lots of brown butter and sherry vinegar then topped with roasted delica wedges, tangy goats cheese, crispy sage, and maple candied pumpkin seeds. All on top of an einkorn pastry.

One of my favorite developments. Autumn in a pastry.

We’ve got autumn in full swing at the bakery 🍂

N’duja, Lincolnshire Poacher, Hot Honey, & Fennel Seed.

Croissant dough laminated with an N’duja and @theestatedairy compound butter. Cross laminated and baked with sharp Lincolnshire Poacher, then filled with an N’duja & Lincolnshire poacher béchamel, glazed with in house made hot honey, and finished with toasted fennel seeds & fennel pollen.

On the counter for the rest of summer.
