Bachan’s Japanese Curry 🍛

This is the ultimate comfort dish filled with lots of love & flavor. Every bite feels like a warm hug on a cold day. My Boyfriend’s (@michaelbermudez) Bachan (Grandma) would make this for him growing up & I’ve taken the recipe & added a few twists to make it one of my easy goto weeknight dinners. The moment the weather in Los Angeles drops below 70 Degrees this is cooking on my stove.

I chose to make mine with ground turkey & tofu this time, however feel free to substitute any protein you would like! Bachan always does chicken & I have some friends who prefer just tofu! Also feel free to add whatever veggies you would like! Get creative!

Ingredients:
1lb Ground Turkey
1 Package Medium Firm Tofu, cut into cubes
1 8.4ounce Golden Curry Sauce Mix (Mild, Medium, or Hot – I use Hot)
1 Large Onion, chopped
8 Stalks of Celery, chopped
4 carrots, chopped
4 Large Brown Potatoes, peeled and cubed
4 cloves garlic, minced
1tbsp Garlic Powder
1tbsp Onion Powder
Olive Oil or Butter
Salt & Pepper to taste

Instructions:
Cook Ground Turkey with garlic powder, onion powder, & olive oil in a large pot until cooked.
Add in carrots, onions, celery, & potatoes and continue to cook for about 5 minutes to get the vegetables a little soft.
Then add 5 cups of water to the pot. You want the ingredients to be completely covered by the water. (I prefer this curry to have a little more “broth” so I tend to add a little more water, if you prefer your curry thicker then add less water)
Chop up the Golden Curry Sauce Mix (use the entire package) & immediately add it to the pot of ingredients.
Add fresh garlic & siracha if you would like to kick it up a notch!
Let all the ingredients cook on the stove until the veggies are tender & you can easily cut through the potatoes. I like to let it stew about 10 minutes longer after this point, so the flavor really develops.
Add Salt & Pepper to taste.

Serve Curry over rice (or as I prefer, rice on the side) & top with sliced green onions, sesame seeds, & a drizzle of siracha.
Makes about 8 Large Servings.
