postpartum calls for PASTA 🍝 

It’s been two months since we welcome our second baby girl into the world. I have been soaking up all the time with the girls and I’ve taken a huge break from cooking. Thanks to the help from all of you. Our meal train was such a blessing. I haven’t really cooked at all until recently. 

I scored an epic ravioli mold at the thrift store the other day and wanted to put it to use. I don’t know if it was inspiration from spring, asparagus, popping up or the ravioli mold - but we created such a wonderful Sunday lunch. Thank you for all of the hands and help John and Alexis. My oldest- Ellidy loved it too. It was like building with Playdoh.

Hey Friends and family:

What started as a little project last Thanksgiving, has grown so much one year! Little by little, I’ve been pursuing this dream of mine. With help of my friend Kathryn from @fredandmina we created a dream logo, spring presales from our community helped me pay for my rum cake market cart, @busymomnutrition took me under her wing to sew my yellow striped cart skirt and pendants, @naomiculleyphotography  took some headshots for a rum cake premiere I had at the @thehackneywashingtonnc  in May, @j.bliven  gathers and delivers the best pecans, Chris from @sweaterboxconfections spent an incredible amount of time with me testing out shipping ideas/options and showing me how to shrink wrap the cakes. @channant spent an entire morning with me getting capturing creative food photos for my shopify site. I literally could not have come this far without yall. Now, Roanoke Island Rum Cakes is a registered LLC and has its own online store!!! We are also open to ship nationwide this holiday season! I’m so stoked. I am still working to the kinks and look forward to seeing what next year brings! This year has been quite the adventure with a toddler in tow and another on the way. Thank you for your patience in this process.

Heres how to order:
1. Visit roanokeislandrumcakes.com or click the link in my bio 🔗 
2. Add a cake(s) to your cart
3. Choose one of 3 options: local pickup- Manteo Merry Market or @swellsa_brewing or shipping -with two optional delivery dates.
4. Cakes will be picked up/delivered frozen and freshly sealed. They may be returned to the freezer till the day before you plan on serving or be eaten right away! My cakes will last 4-5 days on your counter if kept in an airtight container.
5. Yes, maple pecan is the only option for Thanksgiving! Salted Caramel will be available for my Christmas preorder!

Work views tonight 😍

Coastal Sols all started with the idea of taking everything we loved about our Caribbean and West Coast work chapters and creating something smaller and special of our own here on the Outer Banks of North Carolina.

Every night is filled with its on magic✨

Last night we had a pod of dolphins follow us for a good 40 minutes. It was one of those experiences that made everyone feel like a kid again. Everyone including the crew were in awe. I swear- it never gets old.

And…

Tonights sunset was unreal. The colors just kept filling in and continued to get more and more vibrant. We just wanted to share some of this special moment with you! 🫶🏼

The basic right to source your food locally is being threatened by HB442. Decimating an industry and removing safe, sustainable shrimp from people’s tables and kitchens isn’t right. Consumers, chefs, restaurant owners, seafood markets, and the men and women who bring our shrimp to the docks deserve a say in this process.

Scooped up some of my husband’s favorite things at the @dowdypark market this week for a special Father’s Day meal. Simply delicious

Santa Maria grilled tri-tip, roasted potatoes, blanched green beans,  heirloom tomato-celery salsa

Still soaking it all in ✨

This past weekend was one I will never forget. @nccatch and @thehackneywashingtonnc @carolinachef @susannehackney did such a wonderful job bringing this entire event together. They created THE PASSION DINNER SERIES- an unforgettable dinner series featuring North Carolina’s elite chefs showcasing our exceptional local seafood. It consisted of 5 nights, 11 chefs, fishermen, farmers, seafood distributors, a sommelier, distiller, and one talented photographer @emilybennettcreative that captured all of the moments and behind the scenes beautifully. The passion dinner series not only shared food but also stories behind its life at sea. Coast to table at its purest. An interactive dinner connecting people to their (sea)food on the deepest level. 

Thank you. Im still struggling to fine to words to express all that I am feeling right now- other than extremely grateful 🙏🏼

Still riding the high from an incredible week with my friends at @thehackneywashingtonnc for their first-ever weeklong dinner series—The Passion. 

We celebrated North Carolina seafood and the vital contributions of African Americans to our state’s seafood industry, all while raising money for NC Catch.

Passion Dinner Series 2025
at The Hackney ✨

What an incredible couple of days it has been at @thehackneywashingtonnc collaborating with some of our states most talented chefs in one ☝🏼 kitchen. The Passion Dinner Series was the first of its kind; bringing together sustainable chefs, fishermen, and farmers to share food & stories- and ultimately create a connection from the sea to our tables. 

I had the pleasure of preparing the desserts two consecutive evenings and assisting in the on the line where needed. 🙌🏻😌 

Thank you @nccatch and @thehackneywashingtonnc for organizing all of this and opening up your beautiful space. Thank you to @elmwood1820  for making our visit so comfortable and to @emilybennettcreative  for capturing all of the special moments. @susannehackney for all of your hard work planning. My parents clynnmoseley  and @mark_kraz1 for making the trip down. To @captain_ryann and @victoriaeveretttttttttt for taking care of the babe and banks while I was gone. Hey new friends 👋🏼 
allow me to reintroduce myself on here. 

My name is Jill Thompson. My culinary journey began in 2010 while living in New Zealand, where I developed an appreciation for the love and craftsmanship poured into food. Traveling the world has fueled my passion for discovering culinary treasures and recreating the flavors I experience along the way.

I stepped into the spotlight as a chef while working alongside my partner as a captain and chef team aboard boats in the Caribbean. Cooking in small galleys with limited access to ingredients challenged me to be resourceful and creative, deepening my love for using local, seasonal provisions. The beauty of being a yacht chef extended beyond discovering new destinations—it was about adapting, learning, and embracing the cultural delicacies of each place.

My journey also led me to train under inspiring farm-to-table chefs at the Ashburton Cookery School in Devon, UK, and The Greyfield Inn on Cumberland Island, Georgia. Now, settled on Roanoke Island in the Outer Banks, I’ve immersed myself in the local community of farmers and fishermen, celebrating the region’s unique culinary heritage. My cooking style balances sustainability, simplicity, and elegance, always telling the story of where the food comes from.

My husband and I launched a sailing business on the island, where one of our signature experiences is a “Coast to Table” dinner at anchor, blending my love for the sea and fresh, local cuisine. I’m also building Roanoke Island Rum Cakes, a passion project that bridges my past and present, infusing flavors from both the Caribbean and the Outer Banks with a blend of Virgin Island and Roanoke Island rums.

Food is a story, and I love sharing it—one dish, one journey, and one bite at a time.
