Baharat 7 spice mix with Egyptian Cardamom my Grandparents found traveling + their mad face when I forgot to send them a thank you note 😅😅

Grinding spices in a molcajete is meditative, but exhausting, and oh so satisfying to see and smell the results.
••
The Egyptian Cardamom is so pungent, not quite sure how to balance it’s strong baking soda-esque flavor
••

Cooking with my oldest friend!

Found a beautiful red snapper in Summit County Colorado to try the pescado a la playa from Chef @gabrielacamara and @contramarmx
••
We made a pine nut romesco and a Colorado spring onion pesto for the “red and green” sauces
••
I phoned my mom this morning who immediately asked me if I ate the eyes and brains of the fish just like my abuela would to the disdain of her children. Whole fish cooking just hits different..

Chef cooked the piggiest of pig from @mockingbirdfarmmg along with smash roasted beets, a fermented jalapeño butter, and “Texas Dukkah” with pecans. So impressed with the skill of this group and the bounty of Central Texas. taken in Serana by @tiojakecooks

Maria’s birthday dinner!

We ran a Japanese theme through the dinner and music to celebrate Maria’s day. Everyone shucked an oyster with a spoonful of sake mignonette. A crispy chicken skin crunch was promised with the teriyaki. Maria told me about some of the traits she is mediating on which was mirrored in the furikake clutter toppings that that were separated from the main. Intentional food for an intentional lady!

I argued in a healthy discussion with a couple of my fellow Jews about the must have toppings to serve with Latkes. Applesauce? Sour cream? Choose one..

Taking that friendly battle, and with glorious kimchi pancakes, foraged ramp chi, and classic Napa chi from @volcanokimchi I riffed off a holiday favorite making a kimchi cream sauce achieving the Motts sweetness with home made strawberry vinegar. The berries were gobbled up with brunch the other day but would have complemented this dish nicely! 🍓🥬🥞 #kimchi #fermented #homecooking taken in San Francisco, California by @tiojakecooks

Lechón inspired marinade for all my meat friends 🍖 🐟 🐶
