I’ll be the first to admit I’m lazy about cooking at camp. I would much rather prep a little before to make it easier and give me more time to relax.

Is it a salad, is it nachos? It’s a little bit of both.

I grabbed leftover taco fixings we had from earlier in the week which made this super easy. A pound of browned beef and some melted cheese is kind of basic. The rest of the toppings are whatever makes you happy.

Premade crust makes this fan favorite that much easier. After that a jar or marinara, cheese, and toppings is all you need. Bonus for this one is everyone can make their own just the way they like. Pineapple anyone?

Are they really fried rice bowls if I forgot the egg? Either way they had a little bit of crunch and were absolutely delicious after a long day of hiking and exploring.

Cooking the rice ahead of time made this so easy! You could cook the turkey ahead of time if you wanted too. A bag of shredded carrots and a bag of shredded tricolor cabbage saved me time from chopping. Don’t forget to grab the soy sauce or liquid aminos.

A slower morning gave me a little extra time to cook eggs and toast the English muffins but I still used precooked bacon because remember I’m lazy.

Leftovers were wrapped in foil for easy re-heating the next day. I think they were even better on day 2. Great fuel for a morning hike!

Okay hotdogs are always a no brainer but I was grateful for such an easy option this particular evening because everything was wet and muddy from a glorious evening shower and thunderstorm.
