Salmon soba with ginger citrus dressing 🐟🍊🍋

Delicious to look at, better to eat. Light and refreshing, this one's a banger! And so simple 👌

1. Combine soy and sugar in a bowl, add salmon and coat, set aside.

2. Cook noodles and add in beans before the end to cook through. Drain, rinse under cold water and set aside.

3. Add salmon to medium heat in a pan, 6 mins flipping halfway to cook through

4. Add thinly sliced shallots, 60ml grapefruit juice, 1tbsp grated ginger, zest and juice of 1 orange and 1 lime together and mix.

5. Put your noodles and beans on a plate, top with salmon, orange slices, chilli and sesame seeds. Spoon over your dressing and bish bash bosh! 👊

What's up Melbs!? Another 7 day lockdown 😔... but don't worry we got this covered! 👊 Grab a glass, pour some of the red stuff and get cracking in the kitchen with this eggplant Milanese! Trust me it's the bomb 💣

Recipe stolen from our boy @jamieoliver with ingredients from @gumtree_goodfood

I smothered it in parmesan and fresh basil and had a lovely glass of McLaren Vale Shiraz.

Do it.

We will get through this 🍷❤️

Throwing it back to the warmer weather with this one 😍🙌

Oven roasted sweet potato, eggplant and red onion tossed in olive oil, salt and pepper. Topped with whipped ricotta, lemon juice and zest, parsley, mint and pomegranate seeds and molasses for that extra juicyness. Plus of course some cheeky snags from the BBQ. Tbh, you can try it with or without the snags, it's delicious and fresh either way 👌

Recipe in my highlights ✌️

Perfect for those colder nights, I borrowed this little recipe from @halfbakedharvest after my mate @swaaa___ cooked it for me and I kept dreaming about it so I had no excuses now that I had my new @lecreusetanz pan to give it a whirl.

Creamy and deliciously juicy chicken that melts in your mouth with the addition of the sundried tomatoes and topped with rosemary and fresh lemon

Top tip - I found a rosemary bush opposite mine for this, it really does grow everywhere and is best fresh 👌🤫

Anyone that knows me, knows how much I love Thai food and I definitely miss my Thai family from back home where I learnt a lot of the basics and tried the menu 100x over 😂

With that said he's my version of Pad Krapow Gai. Chicken mince broken down with Thai basil and chilli. I used to have this all the time in Thailand and Laos and cannot get enough!

Deliciously topped with a fried egg and some Thai sweet basil, I could smash this all day 👌🌶️🔥

Honey, lemon, thyme and halloumi salad 😍🤤 If you're looking for a simple and delicious light dinner or salad, this is your one.

Marinade your Halloumi in honey, lemon, fresh thyme and olive oil. Transfer to a pan making sure your slices aren't too thin and cook both sides. I buy the big blocks from Woolies which will last you ages and get the best bang for buck (and taste delicious) 👊

I made a rocket salad with medley tomatoes, cucumber, avo and drizzled with olive oil, lemon, wholegrain mustard, pepper and honey 🤌

🐜 ATTICA 🥔

I'd previously booked this last year for my birthday but COVID hit and so going back for my 30th recently was honestly the most incredible experience, with the most delicious food and the most amazing staff, not forgetting my partner in crime @jordannavw_ who was there to enjoy all of it with me.

Whatever you do, don't be scared by a price. This experience will stay with me forever. Every little detail, every story, every intricate detail and unbelievably tasty part of this dinner was so well thought through. Words almost can't describe how good this was and I highly highly recommend going or saving to go. It was epic! 🙌💯

Thanks to @atticamelbourne for having us and showing us how amazing a dining experience can be. The local and Australian produce used was an incredible touch along with the stories that we were told about where the food came from, the people that produced and supplied it and how it was prepared or cooked.

When you get the urge to make homemade pesto and smash a lovely big bowl of simple, yet delicious pasta 💪😍

Stupidly signed up to a 204km bike ride in 5 weeks time without training... so every aspect of my routine is now shifting towards trying to get the most out of it. Wish me luck 😬 and if you have any tips or just think I'm mad, let me know 😂🚴‍♂️🍑

Pesto ingredients (to liking):
1.5 cups fresh basil
1/3 cup pine nuts (lightly toasted)
4 small garlic cloves
3/4 cup parmesan
1/4 red chilli
2/3 cup olive oil
Salt
Pepper
Half lemon

Blitz in a blender and bobs your uncle 🤙
