Mexico's Al pastor and Filipino Tocino were born on opposite sides of the Pacific. Tonight they share a plate.

Meet the Pork Tomahawk "Pastor-Cino."

Dry-rubbed and seared hard on the grill for a deep, caramelized crust. Glazed in annatto, the seed behind al pastor's signature red: sweet, sour, and a slow build of heat.

On the side: pineapple compressed in Mexican chile oil and charred sweet onions. Then the best part. Warm tortillas hit the table, so you can slice, stack and build your own tacos.

What's that Steak?!

Picanha originated in Brazil as a traditional churrasco barbecue staple before rising to fame across South America and global steakhouse culture. In southern Brazil, the branding iron or the area where cattle were poked or branded on the rump was called a 'picanha', eventually giving the adjacent meat cut its name.
