and remember, everything you see is for sale. from the art on the walls to the objects on the shelves, you can take a little bit of trobar home with you.

A few shots from my last #chefresidency at @trobar_ , Mallorca.

Thank you to everyone who came by, sat at the table and shared these hot hot evenings.

On the menu:

1. Tempura green beans, almond emulsion, beetroot powder

2. Peaches, tonnato, Manchego, pistachio, lime zest

3. Herb gnocchi, stracciatella, burnt peas, mint, lemon zest, Parmigiano Reggiano

4. Cod, grilled marinated peppers, egg yolk, herb salad, herb oil

5. Roast beef, celeriac purée, burnt onion, olive oil, tarragon

Some restaurants are remembered for what’s on the plate, others for the room you dine in. Trobar doesn’t make you choose.

Tucked away in Cala Ratjada, it calls itself Mallorca’s only gastro-gallery. The chair you’re sitting in, the glass in your hand, the artwork on the wall behind you: all of it is individually curated.

The kitchen changes every few weeks, handed over to a rotating cast of international chefs on residency. So the food you eat tonight may never appear on that menu again.

It feels intimate, creative, and refreshingly different.
