My favorite proportions (heavy on the Fernet)Rye - 2 ozFernet 0.75 ozSimple Syrup - 0.5 ozAngosturra Bitters - 3 dashesIt's a "prickly" cocktail - the peppery spice of the Rye, the assertive herbal bitterness of the fernet, and the more subtle bitterness of the Angostura. The simple syrup does little to tame this, but it does make everyone play well together. by @troygies

Last night's absinthe frappé—a classic nightcap and a wonderfully moody pour. The process is almost meditative: fill a highball with crushed ice, then pour 1.5 oz of absinthe over it, watching the green liquid "snake" its way down. Then, pour 4-5 oz of ice-cold water slowly over the top. This is where the magic happens: the "louche" effect, as the oils in the absinthe precipitate, transforming the drink into a hypnotic, milky white. A perfect way to end the day. by @troygies

Velvet Rue - Manhattan meets Sazerac. 1½ oz bourbon½ oz sweet vermouth¼ oz Bénédictine2 dashes chocolate bittersAbsinthe rinse1 dash Peychaud’s bittersVery spirit-forward, but rich and layered. I went with a full ¼ oz absinthe instead of just a rinse — but it works. The chocolate bitters hit right up front, then the bourbon and absinthe edge bring it home with a sharp, herbal finish. by @troygies

Today, on International Holocaust Remembrance Day, we reflect on the profound tragedy of the Holocaust and the lives lost. In the Jewish Quarter of Rome, brass plaques mark the homes of individuals forcibly taken and sent to concentration camps. Of over 1,000 people taken, only 16 survived.Standing in that place on the anniversary of this atrocity (October 16-17), we were reminded of the weight of history. Time and distance may separate us, but walking in the footsteps of these victims was a sobering and deeply emotional experience—a stark reminder of the need to remember, honor, and learn from the past. by @troygies
