Pumpkin crunch, but make it Disney 🎃✨ Mickey got a little cream cheese frosting makeover, and this fall dessert is almost too cute to eat! Crispy, buttery pecan topping with a soft pumpkin layer underneath.

🎃 Pumpkin Crunch Recipe

Ingredients

* 1 box yellow cake mix (My favorite is @bettycrocker )
* 1 can pumpkin purée (15 oz.)
* 1 can evaporated milk (12 oz.)
* 3 large eggs
* 1 cup sugar
* 1 tsp ground cinnamon
* ½ tsp salt
* 1 cup chopped pecans
* 1 cup butter, melted

Instructions

1. Grease a 9×13-inch pan and line the bottom with parchment paper.
2. Whisk pumpkin, evaporated milk, eggs, sugar, cinnamon, and salt until smooth. Pour into the pan.
3. Sprinkle cake mix evenly over the pumpkin mixture, followed by pecans.
4. Drizzle melted butter over the top.
5. Bake at 350°F for 50–55 minutes, until golden. Let cool, loosen the edges, and invert onto a serving platter so the crunchy crust is on top.

🧁 Cream Cheese Frosting

* ½ cup unsalted butter, softened
* 8 oz. brick-style cream cheese, softened
* 1 tsp vanilla extract
* ¼ tsp salt
* 4 cups powdered sugar

Beat butter and cream cheese until smooth. Mix in vanilla and salt, then gradually add powdered sugar until fluffy. Pipe your favorite Disney-inspired design on top!

A little taste of home 🌈🍰

Growing up in Hawaiʻi, I’ll always have fond memories of my parents buying me a DeeLite Bakery rainbow cake for my birthday. 🥹 So I had to try making my own copycat version with layers of lime, guava, and passion fruit!

If you’re from Hawaiʻi, you already know how special this cake is. And if you’ve never tried it, consider this your sign because it’s SO delicious! 💚💛🩷

A little tip if you’re making this: I recommend thinner layers so you get a better cake-to-frosting ratio. I just didn’t have nice 13×9 pans to make that happen. 🤣

🌈 My copycat recipe tips:
• Use white @bettycrocker all three flavors.
• Swap the water for juice to get the lime, guava, and passion fruit flavors.
• Separate the eggs, whip the egg whites into a meringue, and gently fold them into the batter for a lighter, fluffier cake.
• Follow the measurements on the box and bake at 325°F, checking for doneness as you go.

Whipped cream cheese frosting (outside):
• 8 oz softened cream cheese
• ⅓ cup sugar
• 1 tsp vanilla
• 8 oz thawed Cool Whip

Guava gel topping:
• 2 cups guava nectar or juice
• ½ cup sugar
• ¼ cup cornstarch
• 3 tbsp water

Cream cheese frosting (inside):
• ½ cup softened unsalted butter
• 8 oz softened brick-style cream cheese
• 1 tsp vanilla
• ¼ tsp salt
• 4 cups powdered sugar

You can also use the whipped cream cheese frosting for both the filling and outside if you prefer a lighter frosting!

Finish with rainbow sprinkles, and you’ve got a little slice of Hawaiʻi. 🌈
