miso tanpo

very proud of the work on this one; simple and amazing.

sushi rice seasoned with apple cider vinegar and sugar, pounded until it gets really springy and chewy, then formed and skewered. brushed with butter and grilled over the coals, then hit with a paste made from smoked egg yolk, house-made pecan miso, tamari and pecan oil. back on the grill until nice and toasted, then finished with purple sweet potato vinegar and freshly grated burgundy truffle. by @tylvrrr

trying to have fun taking pictures at work, wanna share here for some motivation to continue forward. chef alex really outdid himself on this one, it’s honestly outrageous. by @tylvrrr

Taking over prep on this one has been 😅

Frenched pork rib, tied with butcher’s twine to give it a clean handle for eating with your hands. The rib is cooked until tender, then finished over charcoal and lacquered in a tare made from the leftover cooking liquid and smoked sorghum.

It’s coated with puffed buckwheat and kelp that’s been cooked in apple cider vinegar, white shoyu and sake then dehydrated and turned into a crumble. The goal is to make eating with your hands feel intentional and clean, while still keeping the rib pretty primal. by @tylvrrr

a light drains in under the door. the past couple months have been solid, quiet, steady. just staying locked in, staying focused, and letting that be enough. by @tylvrrr

Checked a corner off the bucket list.
An afternoon with @out_inthefield / soil, season, and strangers at the same table. A reminder that the best meals are where the land and stories meet. Met some awesome new folks and chefs in the process, solid Friday. by @tylvrrr
