We’re excited to announce Fall dates for Quercus and Uberto are now available starting September. It’s been a joy to share this project with our Atlanta and Georgia community and beyond.

The word “restaurant” means to restore and we want to change what people imagine. Because it points out to so much more: the relationship between ourselves and the land.

Guests can book overnight stays by choosing one of four suites and your meals are included. After booking, our concierge team will be in touch to help you plan your stay.

For those looking to dine exclusively at Uberto Restaurant, dates are available through Resy on Friday and Saturday evenings for the tasting menu.

Uberto offers an always-evolving tasting menu drawn from the garden, the woods, and the changing light of our working ranch, Quercus. A meal at Uberto is an invitation: to slow down, to savor, and to become part of the story written in time and oak.

Each menu is rooted in the soil – designed with care, intention, and a deep respect for the ingredients we grow, gather, and prepare. Because every element of the experience is crafted in harmony with the landscape, accommodating dietary needs requires advance preparation.

Uberto is now open for reservations through May.

Over the past two years, we’ve spent our hours digging garden beds, foraging trails among pine and oak, and falling head over heels for a hidden corner of Georgia.

Out of that came Uberto—a new restaurant, and a new way to imagine how we connect through land and food.

Uberto lives at Quercus, a working ranch about an hour south of Atlanta along the Flint River cultivated for generations.

The tasting menu changes with the light and the soil—rooted in what we’re growing, foraging, and dreaming up each week. It’s thoughtful, a little wild, and full of heart.

Chef Ryan and Chef Jake are behind the kitchen, surrounded by old friends and new ingredients. The energy is joyful, the food is personal - we can’t wait to welcome you.

Despite the magic of the landscape and how far we try to push ourselves in cultivating its mysteries, at the end of the day it is the noble work of human hands that tends the soil, listens to the pasture, and tenderly stewards each of its many offerings to the table. Distillation is essential to the project of Uberto. It is neither pure wilderness nor pure technique that yield the best result - but when those two concepts are put into conversation with one another. We're constantly challenging ourselves with cutting edge technology and old world methods to render and transform what the landscape gives us into new, delightful experiences. by @uberto_restaurant

There's so much that goes into designing a dish that's able to capture a time and a place. It's a photograph that disappears into a memory. Texture, color, smell, temperature. Dozens of variables become the instrument to the conducted orchestra. Each note meant to complement the next. Even change it. by @uberto_restaurant

To maximize the landscape there can be no technique or method unexplored. Featured here are both the yield of the pasture and garden which require exquisite husbandry, but so too, the tradition of foraging. Structured wandering into the forest looking for clues that reveal entirely wild ecosystems. Each plays a part in distilling everything that the landscape of Quercus has to offer. by @uberto_restaurant

The team at Uberto is inspired by the Japanese tradition of Donabe. There's a spirit of precision that meets natural wonder. Soil meets technique and discipline. Slow and fast methods intertwine. Dining at Uberto is less tasting menu and more tour through the gardens, streams, and pastures of Quercus. You may walk down the same path but no day will ever truly be the same. Each course is a chance to experience something totally new. by @uberto_restaurant

At the center of our dining space is a laboratory filled with novel concoctions and fermentations constantly seeking to distill alchemy out of the landscape of Quercus. Colors, flavors, and vibrancies unfold as the seasons change and the soil yields its fruit. by @uberto_restaurant

At Uberto we honor the landscape of Quercus in everything we do from the earthenware made from clay found in the river beds to knives inlaid with wood turned by Georgia carpenters. Everything can be a celebration of place. by @uberto_restaurant
