🍂👩🏼‍🍳 CREAMY ROASTED TOMATO & RED PEPPER SOUP

Perfect to have in your fridge on busy days, so you always have a delicious, nutritious meal within reach. It’s so simple to make, but has SO much flavour from the roasted vegetables!

INGREDIENTS (4 SERVINGS)
• 800g sweet cherry tomatoes
• 2 red pointed peppers
• 1 large onion
• 1 bulb of garlic
• 1 tbsp olive oil
• 1 tbsp tomato purée
• 750ml vegetable stock
• 100g light cooking cream
• 1 tsp paprika
• 1 tsp oregano
• 1 tbsp balsamic vinegar
• Handful of fresh basil
• Salt & pepper
• Chilli flakes to taste

Preheat the oven to 200°C.
Add the cherry tomatoes, red peppers, onion and garlic to a baking tray. Cut the top off the garlic bulb as shown in the video.
Drizzle with olive oil and add the paprika, oregano, balsamic vinegar, salt, pepper and chilli flakes.
Roast for 40–45 minutes until the vegetables are soft and beautifully roasted. It’s fine if they look a little charred!
Squeeze the roasted garlic out of the bulb and add all the vegetables to a pan. Add the tomato purée and cook for 1–2 minutes.
Add the vegetable stock and gently simmer for 10 minutes.
Add the fresh basil and blend until completely smooth.
Stir in the cooking cream and season with extra salt and pepper if needed.

TIP: Make a cheesy grilled cheese to go with it using sourdough bread, cheddar and mozzarella. Toast until golden and crispy, then dip away! 👩🏼‍🍳✨

Save this one for your next cosy dinner. 🍅🥣❤️

I’ve tried so many different shampoos and hair masks, but finding one that actually leaves my hair feeling hydrated, soft AND looking healthy isn’t always easy 🫧✨

The Naturtint Hyaluronic Nature range has quickly become one of my favourites, especially when my hair needs that extra boost of hydration and shine 🩷

Q4 Reset ♥️

5 things I've done to get myself ready for Q4:

1. Full clearout of my house
2. Change my 2 portfolios into 1
3. I've created spreadsheets for everything
4. I plan my weeks ahead
5. Phone free periods

Is there anything that you do to prepare for Q4? 😊✨
