Why sourdough?

Because what goes into our food matters.

We choose our ingredients carefully — from the flour we use to the salt, butter, and everything in between.

And at the heart of everything we bake is sourdough.

Fermentation develops flavor, changes texture, and gives the ingredients time to do what they do best.

It takes longer.
It takes more care.
And yes, it means we can’t always rush things.

But that’s how we like to bake.

Good ingredients.
Good fermentation.
A little more time.

There’s a lot of process behind every Salt Bread.

Our bakers start as early as 3AM, and the work doesn’t stop when the doors open.

From feeding our little Levain, to mixing, rounding, shaping, proving, and finally baking — every step takes time, patience, and care.

We don’t rush the process. We simply make it the way we believe it should be made.

Thank you for waiting, for understanding, and for letting our little kitchen do things properly. We’ll keep working hard to make more, and to make them better for you.
