Mirchi Bhajji 🌶️🔥

The crispy story behind one of India’s favourite chilli snacks
Ever wondered how a simple green chilli becomes a crispy, golden and spicy evening snack?
Mirchi Bhajji, also known as Mirchi Bajji or Mirapakaya Bajji in different regions, is a popular Indian snack made by coating large green chillies in seasoned besan (gram flour) batter and deep-frying them until crisp and golden.
There isn't one universally documented place or person credited with inventing Mirchi Bhajji. Instead, different versions developed across Indian regional food traditions. Southern versions are particularly associated with Andhra Pradesh, Telangana, Karnataka and Tamil Nadu, while related chilli fritters such as Mirchi Bada have their own traditions in Rajasthan.

The chillies used for bhajji are generally large and thick, and many .
🌶️ How is Mirchi Bhajji made?
First, the green chillies are washed and prepared. A lengthwise slit can be made through each chilli, and the seeds and inner membrane may be removed depending on the variety and desired spice level.
Next comes the batter.
Besan is mixed with salt and spices to create a thick coating. Depending on the regional recipe, ingredients such as turmeric, chilli powder, ajwain or rice flour may also be used.
Some versions are stuffed before frying. Tamarind, coconut, peanuts, spices, onion and other regional ingredients can be used for the filling.
The prepared chillies are then dipped completely into the besan batter and carefully lowered into hot oil.
As they fry, the batter puffs up and turns crispy, golden and crunchy, while the chilli inside becomes soft.
Finally, the hot bhajji is served with chutneys, onions, lemon or other accompaniments.

And that's the transformation:
🌶️ Fresh green chilli
🥣 Spiced besan batter
🔥 Hot oil
✨ Crispy golden coating
🍋 Chutney + onion + lemon
A simple chilli becomes one of India's beloved street-food snacks.
From roadside tea stalls to rainy evenings at home, Mirchi Bhajji is a perfect example of how Indian food traditions turn simple ingredients into something unforgettable. 🌶️🔥
