Uru Co-founder Akshar Halgali, the best food stories often begin with a dish that makes you stop and wonder what makes it so good.

Over the years, that curiosity has drawn him into conversations with chefs and home chefs, introduced him to new flavours and led him to recreate amazing dishes in his own kitchen. The House Roast Chicken began with one such discovery, at a night market in Goa. The chicken was so juicy and memorable that Akshar wanted to understand what made it work. What followed was six months of experimenting, learning and getting it just right.
